When life gives you a lemons, make protein cookies! At least that’s what we’re doing today with this Lemon Chia Protein Cookies recipe! These cookies are super easy to make, low calorie, and absolutely delicious.

First off, you’ve never had a lemon dessert…you’re missing out! There’s just something amazing about the flavor of lemon combined with sweetness.

The best part about baking with lemon? It’s easy to make almost anything taste good!

Start these lemon chia protein cookies by taking out 2 bowls. You’ll need a large one that’ll fit all of your ingredients and another smaller one.

Add into your large bowl, 4 tablespoons of coconut flour, 2 scoops of protein powder, 1 tablespoon of chia seeds, 3/4 teaspoon of baking powder, 1/4 teaspoon of salt, around 1 tablespoon of lemon zest, and 1/2 teaspoon of xanthan gum which is used as a thickener to keep your cookies nice and chewy!

Lightly mix those ingredients together.

Use a complimenting protein powder flavor. I prefer vanilla but change it up and make your own variations here. Let me know what flavors you like in the comments below!

Add into your smaller bowl, 2 tablespoons of melted coconut oil, 1 large egg, 1 or 2 tablespoons of your choice sweetener, 2 teaspoons of vanilla extract, 2 tablespoons of honey, and 1/4 cup of lemon juice.

Mix those ingredients together.

Last, slowly mix both sets of your ingredients together in the larger bowl until you have your protein cookie dough. I like using a hand mixer to do this step but use whatever you have!

This next step is optional but to make shaping your cookies as easy as possible, cover and put your dough in the fridge for 20-30 minutes. When your protein cookie dough is cold, it’ll be WAY less sticky!

Baked Lemon Chia Protein Cookies

Line a baking pan with either some parchment paper or a silicone baking mat. These silicone baking mats are an awesome investment that’ll last you way longer than a roll of parchment paper.

Use your hands or a cookie scooper and place your dough onto your pan. Repeat until you’ve evenly distributed all of your mix and then shape your lemon chia protein cookies! I use my hands to do this but the back of a spoon works great too.

Pro tip? Using a cookie scooper will help make all of your cookies the same size!

Bake them on 325F/162C for 10-12 minutes depending on how big your cookies are.

Ingredients

  • 4 Tablespoons Coconut Flour - or Oat Flour
  • 1 Tablespoon Chia Seeds
  • ¾ Teaspoon Baking Powder
  • 2 Scoops Protein Powder - Vanilla works great!

  • 1-2 Tablespoons Sweetener - Your Choice
  • 2 Teaspoons Vanilla Extract
  • 2 Tablespoons Honey
  • 2 Ounces Lemon Juice

Instructions

  • Take out 2 bowls (make sure one of them is large)
  • Put your Sweetener off to the side, zest your Lemon, and add in all of your dry ingredients into one bowl
  • Lightly mix those together
  • Add your Sweetener and all of your wet ingredients into your other bowl
  • Mix those together
  • Slowly add your dry ingredients into your wet ingredients and mix everything together until it looks like cookie dough
  • Take out a baking pan, line it with some parchment paper or a silicone baking mat, and shape your dough into cookies
  • Baking on 325F/162C for 10-12 minutes

      How about an alternative like brown rice syrup? This should help a bit while keeping the taste/texture.

      Hi Ashley! Yes, you definitely can. You can also omit the xanthan gum as well if you’re using almond flour.
