Pumpkin Spice Protein Cake Recipe

If you like anything pumpkin then you’re going to love this quick, healthy, delicious, AND low fat Pumpkin Spice Protein Cake recipe!

Here is the recipe for the cake:

  • 1 Cup (80g) Rolled Oats
  • 8 Tablespoons (56g) Coconut Flour
  • 1 Cup (232g) Fat Free Cottage Cheese
  • 1 Teaspoon Ground Cinnamon
  • 1 1/2 Teaspoons Pumpkin Pie Spice
  • 3 Teaspoons (12g) Light Brown Sugar
  • 12 Tablespoons (184g) Liquid Egg Whites (or 4 Large Egg Whites)
  • 2 Scoops (60g) Vanilla Protein Powder
  • 1 Cup (244g) Pure Pumpkin
  • 1 Teaspoon Vanilla Extract
  • 1/3 Cup Sweetener
  • 2 Tablespoons (28g) Coconut Oil
  • 1/2 Teaspoon Salt
  • 2 1/2 Teaspoons Baking Powder

Here is the recipe for the frosting:

  • 5.3 Ounces (150g) Fat Free Vanilla Greek Yogurt
  • 8 Tablespoons (120g) Fat Free Cream Cheese
  • 1 Tablespoon Sweetener

  • Carbs: 13.6g
  • Fiber: 3.4g
  • Sugar: 4.2g
  • Protein: 12g

  • Fat: 44g
  • Saturated Fat: 35g

Combine all of your ingredients for the cake into either a food processor or really powerful blender (make sure your Coconut Oil is melted). Process/blend everything together. Take out a baking pan or dish, coat it with some non-stick cooking spray, and then pour your mix in. Bake on 350°F/176°C for 30:00-35:00. Combine all of your ingredients for the frosting into a large bowl, mix everything together, and then top your cake with the frosting. Mouthgasm!
