Quick Rotisserie Chicken Quesadillas

One of the most requested things I get is for quick meal ideas. Today, we satisfy this request! These high protein Rotisserie Chicken Quesadillas take 10 minutes or less, are cheap, fun to make, absolutely delicious, and super filling!

You’ll need to start this one off by purchasing a rotisserie chicken. You could also use canned chicken or tuna but we’ll jump into that a little bit later.

Now that you have your rotisserie chicken, go ahead and peel it. You’ll need to keep 8 ounces of it off to the side for the macros listed here.

A little rotisserie chicken tip? As soon you get it home you should peel it. It’s a million times easier to peel when it’s still hot. Peeling a cold rotisserie chicken is like mowing a lawn without a lawn mower.

Next, take out a pan big enough to fit a tortilla into. Add little olive oil into that pan and turn your burner on medium heat.

Once your pan heats up, add in a tortilla of your choice to it. I like to press down and move my tortilla around a bit to fully coat it with the oil.

Use a low carb tortilla if you’re watching your carbs!

Rotisserie Chicken Quesadillas

After that, sprinkle in some reduced fat cheese (your choice) and place your chicken on top of your cheese. This will be your bottom layer.

Top your chicken with 1 teaspoon of taco seasoning mix, 6 tablespoons of salsa, 1 chopped up green pepper (you can sauté this beforehand to make it even better), and some more reduced fat cheese.

In total, you’ll want to use 3/4 cup of cheese.

Close off your rotisserie chicken quesadilla with a tortilla on top, and let it cook for around 5 minutes.

Once you see that the cheese has melted on the bottom, add some olive oil on top of that tortilla and spread it around.

Flip your rotisserie chicken quesadillas over and cook for another 5 minutes.

You can also use canned tuna or chicken for this recipe by mixing it together with your salsa and taco seasoning mix before adding it in.

Ingredients

  • 8 Ounces Rotisserie Chicken - or Canned Tuna/Chicken
  • ½ Tablespoon Olive Oil
  • 2 Tortillas
  • ¾ Cup Colby Jack Cheese - Reduced Fat
  • 1 Teaspoon Taco Seasoning Mix
  • 6 Tablespoons Salsa
  • 1 Green Pepper

Instructions

  • Peel and cut up your Rotisserie Chicken
  • Take out a pan big enough for your Tortilla, turn your burner on Medium Heat, add in a little Olive Oil, and let it heat up
  • After it heats up put your Tortilla in followed by your Cheese as the bottom layer, Chicken, Taco Seasoning Mix, Salsa, Bell Pepper that you’ll want to chop up, and last the rest of your Cheese
  • Once the bottom layer melts, add a little Olive Oil on your top Tortilla, and flip it over
  • Once that layer melts remove it from the heat
