No Bake Salted Caramel Cheesecake

Stick to your diet this year and beat those unhealthy cravings with this Salted Caramel No Bake Cheesecake recipe. This healthy cheesecake only takes a few minutes to make, is packed with protein, low in fat, and DELICIOUS!

All you need for this recipe is a bowl and something to mix your ingredients with. I like using a hand mixer but a spatula, spoon, fork, and on will all work with some effort.

Another thing I should mention is that since this is a no bake recipe you really only need a single bowl to make it. If you don’t plan on using a crust with your no bake salted caramel cheesecake you could use this same bowl to eat it out of. I like to portion mine out into smaller servings so I use this bowl strictly for mixing.

Add into your bowl 12 tablespoons of softened (makes it easier to mix) cream cheese, 2 scoops of a vanilla protein powder, 1 teaspoon of vanilla extract, 3 teaspoons of light brown sugar, 1/4 teaspoon of sea salt, 1/2 teaspoon of lemon juice, 1 container of Greek yogurt, and 1 tablespoon of caramel.

Have a salted caramel flavored protein powder? Use that instead of vanilla to really up your game!

Mix all of those ingredients together until it thickens up. Using a hand mixer to do this will make things that much easier but if you let your cream cheese soften up it shouldn’t be too hard to do without one.

Take out a couple smaller bowls or whatever you want to store your mini cheesecakes in and crush up some graham crackers into the bottom of each one. This graham cracker will act as your no bake salted caramel cheesecake crust.

Evenly distribute your cheesecake mix into your bowls and top them with caramel and salt.

  • Put them in the fridge for 10-20 minutes and they’ll thicken up even more like a cheesecake
  • Double or triple the recipe to make a bigger cheesecake
  • Use it as a high protein dip or spread

Ingredients

  • 12 Tablespoons Cream Cheese - Reduced Fat or Fat Free (or Cottage Cheese)
  • 2 Scoops Protein Powder - Vanilla
  • 1 Teaspoon Vanilla Extract

Instructions

  • Add all of your ingredients into a bowl aside from your Graham Crackers
  • Mix everything together until thick
  • Take out a couple smaller bowls and evenly crush up some Graham Crackers into them (this is to create a quick crust)
  • Pour your mix into them
  • Top them with some Caramel and Salt

    my husband and I love your recipes and use them multiple times a week whether it be crokpot, oatmeal or the cheesecakes. One questions why don’t you talk anymore in your videos?

      Hi Lacey! Thanks for the support! Just trying to switch up the style a bit, I do it every so often. Eventually I’ll have a few styles I rotate so everyone is happy (I know some people prefer me speaking the ingredients).
