Lemon Chia Protein Cookies

Materials

  • 4 Tablespoons Coconut Flour or Oat Flour
  • 1 Tablespoon Chia Seeds
  • ¾ Teaspoon Baking Powder
  • 2 Scoops Protein Powder Vanilla works great!
  • ¼ Teaspoon Salt
  • 1 Tablespoon Lemon Zest
  • ½ Teaspoon Xanthan Gum
  • 2 Tablespoons Coconut Oil
  • 1 Large Whole Egg
  • 1-2 Tablespoons Sweetener Your Choice
  • 2 Teaspoons Vanilla Extract
  • 2 Tablespoons Honey
  • 2 Ounces Lemon Juice

Instructions

  • Take out 2 bowls (make sure one of them is large)
  • Put your Sweetener off to the side, zest your Lemon, and add in all of your dry ingredients into one bowl
  • Lightly mix those together
  • Add your Sweetener and all of your wet ingredients into your other bowl
  • Mix those together
  • Slowly add your dry ingredients into your wet ingredients and mix everything together until it looks like cookie dough
  • Take out a baking pan, line it with some parchment paper or a silicone baking mat, and shape your dough into cookies
  • Baking on 325F/162C for 10-12 minutes
