Lemon Chia Protein Cookies

- 4 Tablespoons Coconut Flour or Oat Flour
- 1 Tablespoon Chia Seeds
- ¾ Teaspoon Baking Powder
- 2 Scoops Protein Powder Vanilla works great!
- ¼ Teaspoon Salt
- 1 Tablespoon Lemon Zest
- ½ Teaspoon Xanthan Gum
- 2 Tablespoons Coconut Oil
- 1 Large Whole Egg
- 1-2 Tablespoons Sweetener Your Choice
- 2 Teaspoons Vanilla Extract
- 2 Tablespoons Honey
- 2 Ounces Lemon Juice
Take out 2 bowls (make sure one of them is large)
Put your Sweetener off to the side, zest your Lemon, and add in all of your dry ingredients into one bowl
Lightly mix those together
Add your Sweetener and all of your wet ingredients into your other bowl
Mix those together
Slowly add your dry ingredients into your wet ingredients and mix everything together until it looks like cookie dough
Take out a baking pan, line it with some parchment paper or a silicone baking mat, and shape your dough into cookies
Baking on 325F/162C for 10-12 minutes
