Cake
- 1 Cup Rolled Oats
- 8 Tablespoons Coconut Flour
- 1 Cup Cottage Cheese Fat Free
- 1 Teaspoon Ground Cinnamon
- 1 ½ Teaspoons Pumpkin Pie Spice
- 3 Teaspoons Light Brown Sugar
- 12 Tablespoons Liquid Egg Whites or 4 Large Egg Whites
- 2 Scoops Protein Powder Vanilla
- 1 Cup Pumpkin Puree
- 1 Teaspoon Vanilla Extract
- ⅓ Cup Sweetener
- 2 Tablespoons Coconut Oil Melted
- ½ Teaspoon Salt
- 2 ½ Teaspoons Baking Powder
Frosting
- 5.3 Ounces Greek Yogurt Fat Free Vanilla
- 8 Tablespoons Cream Cheese Fat Free
- 1 Tablespoon Sweetener
Melt your Coconut Oil
Combine all of your ingredients for the Cake into either a food processor or really powerful blender
Process/blend everything together
Take out a baking pan or dish and coat it with some non-stick cooking spray
Pour your mix in
Bake on 350F/176C for 30-35 minutes
Mix all of your ingredients for the Frosting together
Top your cake
