Ingredients

Cake

  • 1 Cup Rolled Oats - 80g
  • 8 Tablespoons Coconut Flour - 56g
  • 1 Cup Cottage Cheese - 232g Fat Free
  • 1 Teaspoon Ground Cinnamon
  • 1 ½ Teaspoons Pumpkin Pie Spice
  • 3 Teaspoons Light Brown Sugar - 12g
  • 12 Tablespoons Liquid Egg Whites - 184g (or 4 Large Egg Whites)
  • 2 Scoops Protein Powder - 60g Vanilla
  • 1 Cup Pumpkin Puree - 244g
  • 1 Teaspoon Vanilla Extract
  • Cup Sweetener
  • 2 Tablespoons Coconut Oil - 28g Melted
  • ½ Teaspoon Salt
  • 2 ½ Teaspoons Baking Powder

Frosting

  • 5.3 Ounces Greek Yogurt - 150g Fat Free Vanilla
  • 8 Tablespoons Cream Cheese - 120g Fat Free
  • 1 Tablespoon Sweetener

Instructions

  • Melt your Coconut Oil
  • Combine all of your ingredients for the Cake into either a food processor or really powerful blender
  • Process/blend everything together
  • Take out a baking pan or dish and coat it with some non-stick cooking spray
  • Pour your mix in
  • Bake on 350F/176C for 30-35 minutes
  • Mix all of your ingredients for the Frosting together
  • Top your cake
