Easy Protein Strawberry Shortcake

Materials

  • 1 Pound Strawberries Fresh or Frozen
  • 1 Tablespoon Honey
  • 1-2 Squirts Lemon Juice
  • 1 ½ Cups Greek Yogurt Vanilla or Strawberry
  • 2 Scoops Protein Powder
  • ½ Cup Whipped Topping Sugar Free
  • 1 Piece Angel Food Cake or Other Shortcake Base (Pound or Sponge Cake, Scones, Biscuits, Shortbread Cookies, Wafers, Cornbread)

Instructions

  • Wash and chop up your Strawberries
  • Add them into a mixing bowl with your Honey and Lemon Juice
  • Let them sit for 10 minutes to macerate
  • What's macerating? Just a fancy word for tossing fruit with sugar or honey and letting it sit. The sweetener draws out the fruit's juices, creating a natural syrup.
  • In another mixing bowl, mix together your Greek Yogurt, Protein Powder, and Whipped Topping until smooth
  • Choose or make your Shortcake Base
  • Angel food cake, pound cake, sponge cake, scones, biscuits, shortbread cookies, wafers, cornbread, and so on can be used here.
  • Add your Shortcake Base into the bottom of whatever you're going to eat it out of
  • Break or crush up whatever you're using for the best texture in every bite!
  • Top your base with some of your chopped up Strawberries
  • Top your strawberries with your Greek Yogurt mix
  • Repeat for more layers
