Egg White Bites

Skip the fast food line and make some meal prep friendly Egg White Bites! This high protein recipe is quick and made with simple ingredients.

Materials

  • 2 ½ Cups Liquid Egg Whites
  • ½ Cup Ricotta Cheese or Cottage Cheese
  • ½ Cup Cheese Shredded (I like Mexican Blend, Feta, and Cheddar)
  • ½ Teaspoon Seasoning Your Choice (I like an Everything Seasoning)
  • 3 Tablespoons Bacon Bits or Other Precooked Meat (Ham, Turkey)
  • 1 Large Bell Pepper Chopped (Use multiple colors!)
  • ½ Medium Onion Diced
  • 1 Cup Spinach Chopped

Instructions

  • Blend or process your Egg Whites, Ricotta or Cottage Cheese, Cheese, and Seasoning together for :20-:30 seconds
  • Coat a muffin or cupcake pan with some cooking spray (silicone cups work great too!)
  • Evenly distribute your Bacon Bits or other precooked meat
  • Chop, diced, and evenly distribute your choice vegetables
  • Pour in your egg white mix, filling each spot almost all the way up
  • Put them into the oven on 350F/176C for around 20-30 minutes depending on the size of your bites
  • Remove and eat or freeze them
  • To reheat them from frozen, put them into the microwave for :30-:40 seconds
