Cook your Protein (if needed)
Chop up your Bell Pepper(s)
Take out a baking sheet (optionally lined) and coat it with some non-stick cooking spray
Place however many Tortillas you're making onto it
Add ½ of your Mexican Cheese onto one side of your Tortilla
Follow with your cooked Protein, Black Beans, Bell Pepper(s), Salsa, and the rest of your Mexican Cheese
Fold your Tortilla over and press it down to lock everything in
Coat or brush the top of your Tortilla with some Olive Oil
Bake your quesadillas on 425F/218C for 7-8 minutes
Flip it/them over and optionally hit that side with a little olive oil
Bake for an additional 7-8 minutes on 425F/218C
