Baked Quesadillas

You asked for it so It’s time we do another quick meal prep! Not only are these Baked Quesadillas quick and delicious but they can be made in either the oven or an air fryer.

Start this one by choosing and preparing your choice protein for your baked quesadillas. Shrimp, lean ground beef or turkey (taco mix!), anything canned or packaged, rotisserie chicken like we’re using today, and so on.

The best thing about this meal prep is that you can use anything you want to make it your own. What you should take most from this recipe is the method.

Next, take out a baking sheet and some tortillas. The amount of tortillas you need will depend on the size of your baking sheet and how many you’re planning to meal prep.

Coat your optionally lined baking sheet with non-stick cooking spray and place your tortillas onto it. Make sure your baking sheet is fully coated.

As for the ingredients I’m adding into each quesadilla? I start with 28 grams of a Mexican blend cheese on the bottom followed by 3 ounces of cooked protein (rotisserie chicken), 30 grams of drained and rinsed black beans, 30 grams of various chopped up bell peppers, 60 grams of salsa, and another 28 grams of a Mexican blend cheese on top.

Remember, you can easily scale this recipe below in the recipe card to make more or less.

Fold your tortilla over, press it down to keep everything together, brush the top with a little olive oil, and repeat the process if you’re making more!

Baked Quesadillas

Once your quesadillas are ready you can put them into the oven on 425F/218C for 7-8 minutes.

After 7-8 minutes you’ll want to flip them over, optionally hit that side with a little olive oil to maximize crunch, and put them back into the oven for another 7-8 minutes.

Air Fryer Quesadillas

To make these baked quesadillas in the air fryer you’ll want to lower the temp to 350F/176C and only cook them for around 4-5 minutes a side.

The downside to the air fryer here is that you can really only make one at a time.

Tips

  1. Top them with some Plain Greek yogurt instead of sour cream.
  2. Make sure your entire tortilla is at least lightly coated in oil (crisp)!
  3. You can lower the fat by 10-15 grams in the recipe by using a reduced or fat free cheese.
  4. You can freeze and easily reheat them in the air fryer.

To do this, add your hard boiled egg and little water into your shaker bottle. Close off your shaker bottle and shake it up for 5-10 seconds.

Ingredients

  • 1 Tortilla - I like Whole Wheat
  • ¾ Tablespoon Olive Oil
  • ½ Cup Mexican Cheese - or Other Cheese
  • 3 Ounces Protein - Your Choice! Shrimp, Cooked Lean Ground Beef or Turkey, Canned Tuna or Chicken, Packaged, Rotisserie Chicken, etc

Instructions

Oven

  • Cook your Protein (if needed)
  • Chop up your Bell Pepper(s)
  • Take out a baking sheet (optionally lined) and coat it with some non-stick cooking spray
  • Place however many Tortillas you're making onto it
  • Add ½ of your Mexican Cheese onto one side of your Tortilla
  • Follow with your cooked Protein, Black Beans, Bell Pepper(s), Salsa, and the rest of your Mexican Cheese
  • Fold your Tortilla over and press it down to lock everything in
  • Coat or brush the top of your Tortilla with some Olive Oil
  • Bake your quesadillas on 425F/218C for 7-8 minutes
  • Flip it/them over and optionally hit that side with a little olive oil
  • Bake for an additional 7-8 minutes on 425F/218C

Air Fryer

  • Cook your Protein (if needed)
  • Chop up your Bell Pepper(s)
  • Take out your air fryer baking sheet (optionally lined) and coat it with some non-stick cooking spray
  • Place your Tortilla onto it
  • Add ½ of your Mexican Cheese onto one side of your Tortilla
  • Follow with your cooked Protein, Black Beans, Bell Pepper(s), Salsa, and the rest of your Mexican Cheese
  • Fold your Tortilla over and press it down to lock everything in
  • Coat or brush the top of your Tortilla with some Olive Oil
  • Air fry your quesadillas on 350F/176C for 4-5 minutes
  • Flip it over and optionally hit that side with a little olive oil
  • Air fryer for an additional 4-5 minutes on 350F/176C
