It’s the holiday season and we’re gonna start it off right with some delicious Protein Eggnog Pancakes! No, not the kind of eggnog you drink at your office Christmas party and end up confessing your feelings to 17 people. This kind of eggnog recipe won’t give you a hangover of regret.

These eggnog pancakes are super simple. Add into a bowl 1 large egg, 2 large egg whites, 1/2 teaspoon of ground cinnamon, 1 scoop of vanilla protein powder, 3 tablespoons of coconut flour, 1/4 cup of eggnog, 4 ounces of cream cheese, and 1 1/2 teaspoons of baking powder.

Mix those together until smooth. Take out a stove top pan, turn your burner on medium heat, and coat it with some cooking spray. Pour your mix in once it heats up and cook each side for around 2-3 minutes!

You could also use an unflavored protein powder or really any flavor, as long as you think it’ll compliment the eggnog flavor. If you do decide to use an unflavored protein powder then I’d suggest adding in a little vanilla extract to the recipe. If you want more of a chocolate eggnog taste then throw in 1-2 tablespoons of some cocoa powder. It’s always good to have some options, right?

Make Shapes!

You can make your protein eggnog pancakes as big or as small as you want. You could even make some fun holiday shapes out of them (get your head out of the gutter) if you wanna get really creative.

These protein eggnog pancakes are DELICIOUS! They also go great with some sugar free syrup and Greek yogurt or light whipped cream.

  • 1 Large Whole Egg
  • 2 Large Egg Whites
  • ½ Teaspoon Ground Cinnamon
  • 1 Scoop Vanilla Protein Powder
  • 3 Tablespoons Coconut Flour 21g
  • ¼ Cup Eggnog or Eggnog Substitute 2 Ounces
  • 4 Ounces Cream Cheese 120g (Fat or Reduced Fat Preferred)
  • 1 ½ Teaspoons Baking Powder


  • Combine all of your ingredients into either a bowl, blender, or food processor
  • Mix everything together
  • Turn your burner on medium heat, coat a pan with non-stick cooking spray, and pour your mix in
  • Cook each side for around 2-3 minutes



Top with a little ground cinnamon and sugar free syrup!
