Microwave Protein Whoopie Pies

Can I get a whoopee for whoopie pies?! These Microwave Protein Whoopie Pies made using protein powder are fit for any diet, only take a few minutes to make, and come with a high protein filling!

For this recipe you’ll need a mixing bowl, a microwave, and a food processor. Your bowl will be to make your protein mug cake which will act as the “cake” to your protein whoopie pies and your food processor will be to make your protein filling.

Add into your protein mug cake bowl 1 large whole egg, 3 tablespoons of coconut flour, 1 1/2 scoops of a chocolate protein powder, 2 tablespoons of cocoa powder, 1/2 of a ripe banana, 1 teaspoon of vanilla extract, 1/4 teaspoon of baking powder, 1/2 container of a vanilla Greek yogurt, and 1 1/2 tablespoons of melted chocolate chips.

Did you know that you can easily melt your chocolate chips in the microwave by microwaving them for 15-30 seconds (more or less time depending on how powerful your microwave is), stirring them, and repeating until melted? Stirring them will keep them from burning so don’t skip this step!

Mix all of those ingredients together. I use a hand mixer for this part but any utensil should work with enough effort.

Switch up the flavor by mixing and matching your protein powder and Greek yogurt flavors. Some of my favorites?

Take out a mug, coat it with some non-stick cooking spray, and pour your mix in.

Put that mug into the microwave for 30 seconds, lightly mix everything around again, and continue microwaving it for 90 seconds.

Remove it from your microwave, let it cool, and flip your mug over to remove your protein whoopie pies cake!

Cut that cake into 4 pieces which will be the “ends” of your microwave protein whoopie pies.

Whoopie Pie Protein Filling

To make your protein filling add 1/2 cup of cottage cheese, 1/2 container of vanilla Greek yogurt, and 1/2 teaspoon of vanilla extract right into your food processor.

Process those ingredients together until you have a frosting like texture then evenly distribute that protein filling onto your cake pieces. Finish by closing them off!

Pro tip? Put them in the freezer for 20 minutes if you want them to taste like ice cream sandwiches.

  • 1 Large Whole Egg
  • 2.65 Ounces Greek Yogurt - Vanilla Fat Free

Instructions

  • Melt your Chocolate Chips
  • Combine all of your ingredients for the whoopie pies into a bowl
  • Mix everything together
  • Take out a mug, coat it with some non-stick cooking spray, and pour your mix in
  • Microwave for :30 seconds, lightly mix everything together, and microwave for an additional :90 seconds
  • Cut your mug cake into 4 pieces
  • Make your filling by mixing all of your filling ingredients together until they are smooth
  • Evenly distribute your filling onto two pieces and close them with the other piece
