It’s the holiday season and today we start it off right with some delicious Protein Eggnog Pancakes!
No, not the kind of eggnog you drink at your holiday party and wake up wondering if you still have a job. This is the kind of eggnog recipe that won’t give you a hangover of regret!
Add into a blender, food processor, or bowl 1 large egg, 2 large egg whites, 1/2 teaspoon of ground cinnamon, 1 scoop of vanilla protein powder, 3 tablespoons of coconut flour, 1/4 cup of eggnog, 4 ounces of cream cheese, and 1 1/2 teaspoons of baking powder.
Mix those together until smooth.
Take out a pan, turn your burner on medium heat, and coat it with some cooking spray.
Once it heats up, pour your mix in once it heats up and cook each side of your protein eggnog pancakes for around 2-3 minutes!
You could also use an unflavored protein powder or really any flavor, as long as you think it’ll compliment the eggnog flavor.
If you do decide to use an unflavored protein powder then I’d suggest adding in a little vanilla extract to the recipe.
Hate vanilla and want a chocolate eggnog taste instead? Throw in 1-2 tablespoons of some cocoa powder.
It’s always good to have some options, right?
Pancake Shapes
You can make your protein eggnog pancakes as big or as small as you want. You could even make some fun holiday shapes out of them if you really want to get creative.
These protein eggnog pancakes are DELICIOUS! They also go great with some sugar free syrup and Greek yogurt or light whipped cream.

- 1 Large Whole Egg
- 2 Large Egg Whites
