Craving a sub but can’t afford the carbs? Try this easy to make and high protein Slow Cooker Bacon Cheddar Ranch Chicken! This meal prep friendly recipe is packed with all your favorite flavors and takes just a few minutes to make.
All you’re going to need for this recipe is a slow cooker! If you don’t have one, here’s a link to the one I’ve been using and recommend.
Start by taking out 4 pounds of chicken breast, trimming the fat off of them, and cutting each piece into quarters. Keep in mind that the bigger your pieces are, the longer they’ll take to cook.
Add those chicken pieces right into your slow cooker with 21.5 ounces of 98% fat free cream of chicken (2 cans), 14 tablespoons of fat free sour cream, 10.75 ounces of condensed soup cheddar cheese (1 can), 1 packet of a ranch salad dressing mix, 1/2 teaspoon of black pepper, 8 ounces of sliced mushrooms, 1/2 chopped up yellow onion, 2 teaspoons of minced garlic, and 1 pack of bacon bits.
Mix all of those slow cooker bacon cheddar ranch chicken ingredients together until everything is well incorporated.
Put your cover on, turn your slow cooker on low heat, and let it cook for around 6-8 hours.
Diet tip? Cut down on the sodium by looking for lower sodium alternatives.
