It’s time you have your cake and eat it too this holiday season with this Pumpkin Spice Protein Cake recipe! If you’re looking for a healthy pumpkin dessert that’s absolutely delicious, easy to make, and comes with a protein frosting then you’ve come to the right place.

For this protein pumpkin recipe you’re going to need either a food processor or blender, a small mixing bowl for your frosting, and your favorite cake pan.

Pumpkin Spice Protein Cake

Add into your food processor or blender 1 cup of rolled oats, 8 tablespoons of coconut flour, 1/3 cup of your choice sweetener, 3 teaspoons of light brown sugar, 1 teaspoon of vanilla extract, 1 cup of pumpkin puree, 4 large egg whites or 12 tablespoons of liquid egg whites, 2 scoops of a vanilla protein powder, 1 teaspoon of ground cinnamon, 1 1/2 teaspoons of pumpkin pie spice, 1 cup of fat free cottage cheese, 1/2 teaspoon of salt, 2 1/2 teaspoons of baking powder, and 2 tablespoons of melted coconut oil.

Did you know that coconut flour is packed with 5 grams of fiber for every 60 calories?

Process or blend everything together until your rolled oats are fully incorporated (around a minute). Once your pumpkin spice protein cake mix is smooth, you’re ready for the next step.

Take out either a baking pan or dish, coat it with some non-stick cooking spray, and pour your cake mix into it. The size of your pan or dish is completely up to you but just remember that your baking time could change depending on what you’re using. As a rule of thumb add more time if it’s a thick cake and less time if it’s thin cake.

Put your cake into the oven on 350F/176C for around 30-35 minutes or until a toothpick inserted into the center of your cake comes out clean.

Remove your pumpkin spice protein cake from the oven and get ready to make your protein frosting while is cools!

Homemade Protein Frosting

Add into your small mixing bowl 1 container of a vanilla Greek yogurt, 8 tablespoons of fat free cream cheese, and 1 tablespoon of your choice sweetener.

Mix all of those ingredients together until your protein frosting forms.

Evenly top your pumpkin spice protein cake with your frosting and anything else you want like some Halloween sprinkles we used today!

Want another flavor frosting? You can easily change up the flavor by using another flavor Greek yogurt (salted caramel!).

Instructions

  • Melt your Coconut Oil
  • Combine all of your ingredients for the Cake into either a food processor or really powerful blender
  • Process/blend everything together
  • Take out a baking pan or dish and coat it with some non-stick cooking spray
  • Pour your mix in
  • Bake on 350F/176C for 30-35 minutes
  • Mix all of your ingredients for the Frosting together
  • Top your cake
