Quick & Easy Low Carb Waffles
Guess what? You’re no longer dreaming and your low carb or keto diet can now include WAFFLES AGAIN! These Quick & Easy Low Carb Waffles are absolutely delicious, packed with protein, and have almost no carbs. The best part? These waffles are just as good, if not better than the “real” thing.
This recipe will usually make around 1 big low carb waffle. If you want more or you’re making breakfast for the family, double or triple the recipe using the slider below!
Low Carb Waffles
First, take out a bowl big enough to add all of your ingredients into. Obviously if you’re doubling or tripling the recipe you’ll need a bigger bowl than the one I use in the video.
Add into your bowl all of your ingredients starting with 1/8 cup of almond flour, 1/2 scoop of your choice flavor protein powder, 1 tablespoon of a sweetener, 1/2 teaspoon of baking powder, 1 large whole egg, 2 large egg whites, 1 teaspoon of vanilla extract, and 2 tablespoons of a fat free Greek yogurt.
Here’s where you can use a flavored Greek yogurt to change things up! I used a coffee flavored one today.
Think outside the box. Vanilla protein powder with banana Greek yogurt, chocolate protein powder with salted caramel Greek yogurt, and so on! Let me know what variation you try in the comments below.
Your low carb breakfast is almost done! All you need to do now is to mix everything together until smooth and turn your waffle maker on.
Once your iron heats up, coat your waffle maker with some non-stick cooking spray, pour your mix in, and wait for the magic to happen.
Minus the 2 grams of fiber, this whole low carb waffles recipe has only 5 grams of carbs!
Yes, these seriously taste just as good, if not better than a high carb waffle. Top them with some sugar free syrup or other low carb/keto friendly ingredients and they’ll be even better.

- ⅛ Cup Almond Flour
- ½ Scoop Protein Powder
- 1 Tablespoon Sweetener - Your Choice

- 2 Large Egg Whites

Instructions

How much is a half of scoop of your protein in tbs or cups? All scoops aren’t the same size.
Do you have a scale? 15g would be 1/2
In case anyone needs to know, do not, under any circumstance, substitute the eggs for flax eggs. You will only end up with the worst mess ever. It isn’t enough of a binder to keep it all together. I’ll just have to wait and see if my kiddo outgrows his egg allergy so I can attempt this again.
I made these with cauliflower dry flour instead of almond flour. They were yummy!!
