Ingredients

  • 2 Large Whole Eggsor 4 Large Egg Whites
  • 1 Teaspoon Vanilla Extract
  • 2 Tablespoons Coconut Flour15g (or Oat Flour)
  • 1 Scoop Protein Powder30g Vanilla
  • 5 Ounces Cream Cheese150g Fat Free
  • ½ Cup Blueberries
  • ½ Teaspoon Baking Powder

Instructions

  • Combine all of your ingredients aside from ¼ Cup Blueberries into either a food processor or blender
  • Process or blend everything together
  • Lightly mix in the ¼ Cup Blueberries you left aside
  • Take out a stovetop pan, turn your burner on Medium-High heat, and coat it with some non-stick cooking spray
  • Pour your mix in and cook each side for around 2 minutes

    I made these tonight. Set them on my kitchen table to cool, before putting them in the fridge for breakfast tomorrow morning. When I finished watching a movie, I came back to the kitchen to see my beagle (Sammy Davis Junior) eating my blueberry pancakes. He had jumped up and pulled the plate off the table. lol. That’s how good these are!! haha. I also made your low carb pizza crust and the new waffle recipe. Both were awesome. 🙂 Thanks for sharing. 🙂
