Cold Brew Low Carb Mug Cake
Most morning routines consist of ingesting coffee beans in some way, shape, or form. Today, we add to that arsenal with this low carb Cold Brew Mug Cake. If you want another way to take in your coffee or a great little quick snack that has a boost, this recipe is for you!
To start, coat a mug or cake dish (ramekin) with some non-stick cooking spray. Add into it 1 large egg, 2 tablespoons of coconut flour, 1 tablespoon of cocoa powder, 1 scoop of your favorite chocolate protein powder, 1 tablespoon of Greek yogurt or sour cream, 2 ounces of cold brew, 1/2 teaspoon of baking powder, and a little salt.
What other flavors work? Vanilla, cinnamon bun, mocha, and so on. Compliment the coffee flavor and your low carb cold brew mug cake will be good to go! I also prefer sour cream for this one over the Greek yogurt.
Mix & Microwave
Mix all of those together until smooth. You’ll want to microwave your mug cake for around 1 1/2 to 2 minutes depending on how powerful your microwave is. If you want, you could stir it halfway through to really make sure it cooks evenly.
Yes, this is delicious and YES, it’ll give you a boost. The caffeine content in this cold brew mug cake if you use a decently concentrated cold brew is around 75-100mg. You could also use regular coffee or espresso if you don’t have cold brew on hand.
Try topping this one with some flavored Greek yogurt, homemade protein frosting, nut butter, etc. Think outside the box and you’ll never get tired of making new variations!

Hi, Derek…I can’t thank you enough for turning me on to Cold Brew Coffee. I use your basic recipe but I substitute Costco Kirkland Colombian pre-ground Coffee (I bought it because it’s about $3.00/pound and I am now addicted to it because I’ve never tasted anything better). Once I have the batch of cold brew coffee, I use it to make cold brew cappuccinos. I put 2/3s of a cup of cold brew coffee in a large mug. I add three Truvia’s per mug. Stir, then I microwave each mug of coffee for 2 minutes. During the microwave process, I make milk foam using the Nespresso foamer. I add the foamed milk to the microwaved Kirkland Coffee and it beats anything Starbucks ever served. I dust the top with some Costco cinnamon. There are less expensive foamers for the milk but Nespresso is the highest quality and we use this thing every day. Seriously, buddy, you have try this to believe it!!!
