Slow cooker meal prep, Italian style. This Italian Slow Cooker Chicken recipe is creamy, low in fat, high in protein, budget friendly, and tastes great as is or paired with almost anything!
Start this one by taking out your slow cooker and 4 1/2 pounds of chicken breast. If you don’t have a slow cooker, here’s a link to the one we’ve been using for over a decade and recommend!
Make sure to trim the fat off of your chicken breast and cut them in half or into pieces. Keep in mind that your cooking time may change depending on how big or small your chicken pieces are.
Add your chicken into your slow cooker followed by 1 can 98% fat free cream of mushroom, 1/2 teaspoon of black pepper, 1 teaspoon of Italian seasoning or equivalent, 1 1/2 cups of optionally chopped baby bella mushrooms, 1 packet of a dry Italian dressing mix, 1/2 chopped up red onion, 8 ounces of fat free cream cheese, 1/2 cup of water, and 4 cloves of chopped up garlic or 2 teaspoons of minced garlic.
Mix all of your ingredients together until everything for your Italian slow cooker chicken looks incorporated.
Put the cover on your slow cooker and turn it on low heat for 6-8 hours. Make sure to give it a quick mix halfway through cooking!
Pro tip? Add more/other chopped up vegetables into your slow cooker for even more fiber and flavor!

Ingredients
- 4 ½ Pounds Chicken Breast
- ½ Teaspoon Black Pepper

Instructions
- Cut your Chicken Breast in half
- Add all of the ingredients into your slow cooker
- Mix your ingredients together
- Cook on Low for 6-8 hours (mix everything around occasionally)

This recipe is AMAZING! My favorite on the site for sure! I have no problem eating this one all week and have made it several times. I cut up a few small white potatoes and throw them in. I throw some corn in from time to time and it’s basically a chicken chowder, this is the real deal right here! Thanks Derek you have made my life a lot easier with some of these recipes. P.S this recipe is so good while your eating it you say to yourself how can something that tastes so good be healthy and beneficial.. Well it is! Excuse me while I woof down the rest of my lunch.

Yea I’ve been doing that with all the recipes just because sometimes I can’t get the exact ingredients the same as yours every single time. They are all usually pretty dang close if not exact though.
Either way, this recipe has been my favorite so far. This stuff over a bed of rice (cooked separate of course) with some bell peppers thrown in crock pot mix with it was amazeballs.

Hey Derek, great and tasty recipe, thanks for sharing. I just plugged all the ingredients into MyFitnessPal and got some different total calories for the recipe, which might be a good thing for us cutting. Here’s my breakdown:
Calories: 2739
Fat: 24
Carbs: 69
Fiber: 5
Protein: 507
This might make more sense based on the macros you’ve got (f/c/p @ 9/4/4 calories per gram), although I am sure it can vary significantly based on the chicken and fat content used.

Thanks Michael! The program I used to calculate obviously had some incorrect calculations and I forgot to check them by hand. I’m going to end up re-doing this recipe once I make it again since the calories are in the video. At least I didn’t go over, eh? I can’t believe I was off by that much! I’ve been checking every recipe since 2-3 times just to make sure. Won’t happen again.
So far I’ve tried the slow cooked chicken, the cheese cake, the tuna cakes, and the cauliflower pizza. Fantastic recipes one and all! Keep up the great work!
