Add protein powder to your cornbread with this Easy Protein Cornbread recipe! Just as good as the “real” thing, packed with bodybuilding macros, and quick to make. One of my favorite healthy side recipes.
Start this one by taking out a large mixing bowl big enough for all of your ingredients, a blender or food processor to make your oat flour, and a baking dish to make your cornbread in.
Make your homemade oat flour by adding 1/4 cup of rolled oats into whatever you’re using and processing or blending them until they look like oat flour. Easy, right?
Cornbread Ingredients
Continue by adding right into your mixing bowl 1/4 cup of fat free milk or milk substitute, 1 large whole egg, 1 tablespoon of honey, 1/4 cup of unsweetened apple sauce, 1 cup of plain fat free Greek yogurt, 10-15 drops of some optional liquid sweetener, your homemade oat flour, 1/2 teaspoon of salt, 2 teaspoons of baking powder, 1/4 teaspoon of baking soda, 1 scoop of a vanilla or natural (unflavored) protein powder, and 3/4 cup of cornmeal.
If you decide to use a vanilla protein powder make sure it’s one where the vanilla isn’t too overpowering!
Mix all of those ingredients either until your easy protein cornbread mix is smooth. I like using a hand mixer to speed this step up.
Did you know that unsweetened apple sauce is a great substitute for butter or oil in most baked goods?
Take out a baking dish (9×7 or 8×8 work great), coat it with some non-stick cooking spray, and pour your mix into it.
Pro tip? Add some chives, jalapeños, bacon bits, or anything else you want to the top of your cornbread before baking it!
Put your easy protein cornbread into the oven on 425F/218C for around 15-20 minutes.
You can quickly check if it’s done by inserting either a toothpick or knife into the center of it. If your toothpick or knife comes out clean, it’s done!

- Pour your mix in
- Bake on 425F/218C for 15-20 minutes

Amazing for a low fat and high protein cornbread recipe! Mine turned out great! Except i will use fine ground cornmeal next time, too grainy and hard for me to eat. I also used instant oatmeal instead cause i was too lazy to grind some oatmeal. So good!

I’ve made this for my husband a few times making it vegan. Turns out great and he loves it! I just added vegan vanilla protein,
coconut yogurt, and flaxmeal “egg”. (And no honey).
I also added fresh corn and baked them as muffins.
Turned out great!
(I think I baked the muffins at 400 for like 20 mins- just check if the muffin tops are starting to turn golden brown).
YES! I make this all the time now! LOVE IT. Very moist. I used 1/2 vanilla protein and 1/2 pea protein, as it was too sweet for me with all vanilla… (the best part is I finally found a way to use up the pea protein powder which tastes horrible on its own!)

This is so good! Easy and fast!! I used half unflavored pea protein and half vanilla protein powder. 6 drops vanilla creme stevia. Bake 16 mins. Came out just right!
I made this with almond milk instead of regular, and cooked it in mini-muffin tins. I kept it at 425, and they were firm to the touch at 12 min. Excellent recipe! I wouldn’t have known it wasn’t “traditional” cornbread.
How many servings is this supposed to make?

I didn’t have applesauce, or apples to make applesauce, so I subbed pumpkin purée. I doubt it made any noticeable difference. So consider that as an alternative. Great recipe.
What can I use as the liquid sweetener?
Some regular sweetener or just get rid of it!
Absolutely fantastic recipe. I added 2 packs of stevia as i like mine a little sweeter. Also added some chopped jalapeños. The problem is trying to eat this in moderation! Thanks again Derek.

I made this tonight with a few modifications and it turned out wonderfully! I used 120g GF cornbread mix instead of the cornmeal and oat flour. I also used chocolate protein powder, which sounds a bit gross, but you couldn’t really taste it. Great recipe, thanks!
