PROTEIN Gingerbread Muffins Recipe (Low Fat)

Protein Gingerbread Muffins Recipe

When I tell you this Gingerbread Muffins Recipe tastes like a soft baked gingerbread cookie does your mouth start to salivate? If so, this recipe will be your new best friend this season!

Here is the recipe:

  • 2 Cups (160g) Rolled Oats
  • 1/2 Cup Sweetener
  • 5 Teaspoons (20g) Light Brown Sugar
  • 3 Scoops (90g) Vanilla Protein Powder
  • 1/4 Teaspoon Salt
  • 1 1/2 Teaspoons Baking Powder
  • 1 1/2 Teaspoons Ground Cinnamon
  • 3/4 Teaspoon Ground Ginger
  • 1/2 Teaspoon Ground Allspice
  • 2 Large Eggs
  • 1/2 Cup (4 Ounces) Unsweetened Vanilla Almond Milk (or Regular Milk/Other Milk Substitute)
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup (122g) Unsweetened Apple Sauce
  • 4 Tablespoons Molasses
  • 1/4 Cup Sugar Free Syrup

  • Fat: 24g
  • Saturated Fat: 4g
  • Sodium: 855mg
  • Carbs: 217g
  • Fiber: 21g
  • Sugar: 94g
  • Protein: 113g

Take out a blender or food processor and blend your Rolled Oats until they look like flour (to make Oat Flour). Add all of your dry ingredients into a large bowl and mix them together. Add all of your wet ingredients into a separate bowl and mix them together. Slowly/gently mix your wet ingredients into your dry ingredients (make sure not to over-mix). Take out a muffin pan, coat it with non-stick cooking spray, and pour your mix into each muffin spot almost all the way to the top (leaving maybe 1/4’’). Top with Ground Cinnamon/anything else. Bake on 350°F/176°C for 10:00-15:00. Enjoy!

Tips:

  • Add nuts, peanut butter, chocolate, or white chocolate into your mix or on top of your muffins!
