One of my favorite cookies to make! This Protein Pumpkin Cookies recipe tastes like a pumpkin pie in cookie form all while being unbelievably healthy!
Here is the recipe:
- 2 Cups (160g) Rolled Oats
- 2 1/2 Scoops (75g) Vanilla or Chocolate Protein Powder
- 2 Teaspoons Pumpkin Pie Spice
- 1 Teaspoon Ground Cinnamon
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1 1/2 Cups (366g) Pure Pumpkin
- 2 Extra Large Eggs
- 1 1/2 Teaspoons Vanilla Extract
- 1/2 Cup (122g) Unsweetened Apple Sauce
- 2 Tablespoons Sugar Free Syrup
- 3 Tablespoons (63g) Honey
Calories in the WHOLE recipe:
- Calories: 1479
- Fat: 23g
- Saturated Fat: 4g
- Sodium: 778mg
- Carbs: 213g
- Fiber: 37g
- Sugar: 82g
- Protein: 105g
Combine all of your ingredients into a food processor, blender, or bowl. Process/blend everything together (if you’re using a bowl and hand mixer/whisk make sure you process/blend your Rolled Oats until they look like flour first). Take out a baking sheet and coat it with non-stick cooking spray. Spoon your batter onto the baking sheet making your cookies however big you want them and then top them if you’re using a topping. Bake on 350°F/176°C for 10:00-15:00. Enjoy!
Tips:
- Before baking top your cookies with some chocolate or white chocolate chips, nuts, cranberries, a broken up Cinnamon Roll Quest bar, etc!

I just made these last week. Turned out absolutely amazing, not one person at work or home had a bad thing to say about them. In fact, every recipe I’ve gotten from your website are great, I just tweak them to fit my macro/taste needs. I actually converted my friend to these healthy versions of desserts, and he’s going to start training with me next week. Keep doing what you’re doing, and thanks for the videos (plan on trying your cookie dough s’mores dip this weekend).
