TACO Omelette Recipe

Taco Omelette Recipe

The ability to combine two things I love together for a breakfast meal has been one of my favorite creations to date. This Taco Omelette Recipe is a well rounded way to start any day and absolutely delicious!

Here is the recipe:

  • 4 Large Whole Eggs
  • 2 Large Egg Whites
  • 1/4 Cup (2 Ounces) Fat Free Milk (or Milk Substitute)
  • 1/4 Cup (around 40g) Chopped Red Onion
  • 1/4 Cup (around 40g) Chopped Green Pepper
  • 1-2 Pinches Black Pepper
  • 1 Ounce (28g) Tortilla Chips
  • 1/4 Cup (28g) Fat Free Cheddar Cheese (or a Mexican/Taco Blend)
  • A little Tabasco Sauce
  • Salsa

  • Carbs: 33g
  • Fiber: 2g
  • Sugar: 9g
  • Protein: 44g

Add your eggs and milk into a bowl. Mix together. Take out a large omelette pan, put your stove top burner on medium heat, spray your pan with non-stick cooking spray, and then let your pan heat up. Chop your red onion and green pepper. Pour your egg mix into the pan. After 1:00 add your black pepper, red onion, green pepper, tortillas (crush your tortillas on top of your omelette), and cheese. Cook until your omelette moves around in your pan (usually a couple minutes). Flip over and cook 1:00. Flip over again and cook for another 1:00. Top with tabasco and salsa. Enjoy!


  • Add some lean ground beef in for even more protein!
