White Chocolate Raspberry Protein Cookies Recipe

These White Chocolate Raspberry Protein Cookies are healthy, quick, and DELICIOUS! The best part about this recipe? You don’t need an oven to make them!

Here is the recipe:

  • 4 Tablespoons (28g) Coconut Flour
  • 3 Ounces Unsweetened Vanilla Almond Milk (or Regular Milk/Other Milk Substitute)
  • 3 Tablespoons Brown Rice Syrup
  • 1 Tablespoon (18g) Raspberry Jam or Jelly
  • 8 Tablespoons (128g) Peanut Butter
  • 3 Scoops (112g) Vanilla Ice Cream Protein Powder
  • 3/4 Cup Raspberries
  • 1 1/2 Cups (120g) Rolled Oats
  • 2 Tablespoons Sweetener
  • 1 Teaspoon Vanilla Extract
  • 1 Ounce (28g) White Chocolate

  • Protein: 13.8g

Chop up your white chocolate, take out a large bowl, and then add all of your ingredients into it. Mix everything together. Take out a baking sheet, line it with some parchment paper, and then shape your mix into cookies. Take your thumb and make indents into the center of each cookie. Add a raspberry into the indent that you just made and then put your cookies into the fridge for around 20:00-30:00 so that they can harden up a bit.

Tips:

  • Keeping your hands damp as you shape your cookies will make your mix less sticky!
  • Using a hand mixer will make things a lot easier!
