1 Minute Microwave Low Carb Cookies

There’s not many things you can successfully do with pride in 1 minute or less. Today, we’re going do 3 of them and they’re all going to be Low Carb Cookies in your microwave!

All of these microwave cookies don’t need many ingredients (you likely have all of them), there’s a ton of variations, you can eat them on your diet, and yes, even your kids will love them!

We’re going to start by prepping our low carb cookie mixes.

Microwave Low Carb Cookies

We start with the original and grandma’s favorite, chocolate chip low carb cookies!

Melt a tablespoon of butter and add it into a bowl followed by 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 2 teaspoons of a brown sugar alternative, 1 large egg, 2 tablespoons of coconut flour, 2 tablespoons of almond flour, 1/2 scoop of protein powder, and a pinch of salt.

Next up? Delicious double chocolate low carb cookies!

Melt 1/2 tablespoon of a lower carb chocolate (sugar free works well) and 1 tablespoon of butter. Add those into a bowl with 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 1 large egg, 2 tablespoons of coconut flour, 1 tablespoon of almond flour, 1/2 scoop of protein powder, 1 1/2 tablespoons of cocoa powder, and a pinch of salt.

Last up? Peanut butter low carb cookies.

Mix together 1 tablespoon of peanut butter and 1 tablespoon of melted butter. Add those into a bowl with 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 1 large egg, 2 tablespoons of coconut flour, 1 tablespoon of almond flour, 1/2 scoop of protein powder, and a pinch of salt.

Mix & Microwave

Finish these low carb cookies by mixing everything together with whatever one you chose (hopefully you made all 3!).

Add your cookie mix onto a plate coated with some non-stick cooking spray, top it with a couple chocolate chips, nuts, or anything else your macros will allow, and microwave it for around :45-:60 seconds depending on how powerful your microwave is.

Easily double or triple the recipe to make multiple batches and eat them warm for optimal results!

I know some people will complain that these are higher in fat but you need to realize those on a low carb diet are eating higher fats. Fats are not bad for you at all, in fact fats are extremely important in ANY diet. Don’t be scared of them, especially if you want to keep your libido.

Instructions

Chocolate Chip

  • Melt your Butter
  • Combine and mix together all of your ingredients
  • Coat a plate with some non-stick cooking spray and add your mix onto it
  • Shape your cookie and top it with whatever you want

  • Combine and mix together all of your ingredients

  • Melt your Butter
  • Mix together your melted Butter and Peanut Butter until smooth

  • Microwave for :45-:60 seconds depending on how powerful your microwave it

    These turned out absolutely mouthwateringly scrumptious!

    I made the peanut butter cookie and topped with dark chocolate, I baked for 8 minutes at 180 degrees instead of microwave, However the texture was more like a cookie cake rather than a chewy , crispy cookie. =/ , perhaps it was cause I added a teeny bit of baking powder.

    Oh well I was still happy…thanks for the recipe!
