1 Minute Microwave LOW CARB Cookies Recipe

1 Minute Low Carb Cookies Recipe

Lets just say there’s not many things you can successfully do with pride in 1 minute or less but today we’re gonna do 3 of them and they’re all gonna be LOW CARB COOKIES! Usually a diet no no but today a diet…yes yes (probably/definitely the worst joke I’ve ever told on here).

We’re gonna start by prepping our mixes.

  1. The original and grandma’s favorite. Chocolate chip cookies! Melt a tablespoon of butter and add it into a bowl followed by 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 2 teaspoons of a brown sugar alternative (I like Sukrin Gold), 1 large egg, 2 tablespoons of coconut flour, 2 tablespoons of almond flour, 1/2 scoop of my Baking Protein Powder (or regular protein), and a pinch of salt.
  2. Double chocolate cookies. Melt 1/2 tablespoon of a lower carb chocolate (sugar free works well) and 1 tablespoon of butter. Add those into a bowl with 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 1 large egg, 2 tablespoons of coconut flour, 1 tablespoon of almond flour, 1/2 scoop of my Baking Protein Powder (or regular protein), 1 1/2 tablespoons of cocoa powder, and a pinch of salt.
  3. Peanut butter cookies. Before we start this one…are you a CREAMY or CRUNCHY peanut butter person? Let me know in the comments! You can find my answer in the video!!! Mix together 1 tablespoon of peanut butter and 1 tablespoon of melted butter. Add those into a bowl with 1/2 teaspoon of vanilla extract, 1 tablespoon of a sweetener, 1 large egg, 2 tablespoons of coconut flour, 1 tablespoon of almond flour, 1/2 scoop of my Baking Protein Powder (or regular protein), and a pinch of salt.

Now mix everything together in whatever flavor you chose (hopefully all 3) and they should turn out. Add the mix onto a plate coated with some non-stick cooking spray, top it with a couple chocolate chips, nuts, or anything else your macros will allow, and microwave it for around :45-:60 seconds depending on how powerful your microwave is.

PRO TIP: Eat them warm!!!

I have cookies to eat so here are 2 quick notes for these cookies:

  1. To convince you guys to try these I’m gonna say this…I GUARANTEE your kids will like them! That should be a testament to how good I think these are.
  2. I know some people will complain that these are higher in fat but you need to realize those on a low carb diet are eating higher fats. Fats are not bad for you at all, in fact fats are extremely important in ANY diet. Don’t be scared of them, especially if you wanna keep your libido. Good fats = good libido = everyone’s happy.

Chocolate Chip Cookies:

  • 1 Tablespoon Unsalted Butter
  • 1/2 Teaspoon Vanilla Extract

  • 2 Tablespoons (14g) Coconut Flour
  • 2 Tablespoons (14g) Almond Flour
  • 1/2 Scoop (15g) The Protein Chef’s Baking Protein Powder (or Any Protein Powder)
  • Pinch of Salt

Calories in each cookie:

  • Calories: 341
  • Fat: 21g
  • Saturated Fat: 9g
  • Sodium: 102mg
  • Carbs: 14g Net Carbs = 7g
  • Fiber: 7g
  • Sugar: 2g
  • Protein: 24g

How to make:

  1. Melt your Butter
  2. Combine and mix together all of your ingredients
  3. Coat a plate with some non-stick cooking spray and add your mix onto it
  4. Shape your cookie and top it with whatever you want
  5. Microwave for :45-:60 seconds depending on how powerful your microwave it

Tip:

  • Eat them warm, they taste AMAZING!

Double Chocolate Cookies:

  • 1/2 Tablespoon Chocolate
  • 1 Tablespoon Unsalted Butter
  • 1/2 Teaspoon Vanilla Extract
  • 1 Tablespoon Sweetener
  • 1 Large Egg
  • 2 Tablespoons (14g) Coconut Flour
  • 1 Tablespoon (7g) Almond Flour
  • 1/2 Scoop (15g) The Protein Chef’s Baking Protein Powder (or Any Protein Powder)
  • 1 1/2 Tablespoons (7.5g) Cocoa Powder
  • Pinch of Salt

Calories in each cookie:

  • Calories: 367
  • Fat: 23g
  • Saturated Fat: 9g
  • Sodium: 164mg
  • Carbs: 16g Net Carbs = 8g
  • Fiber: 8g
  • Sugar: 2g
  • Protein: 24g

How to make:

  1. Melt your Chocolate and Butter
  2. Combine and mix together all of your ingredients
  3. Coat a plate with some non-stick cooking spray and add your mix onto it
  4. Shape your cookie and top it with whatever you want
  5. Microwave for :45-:60 seconds depending on how powerful your microwave it

Tip:

  • Use a sugar free chocolate to really cut down on the carbs!

Peanut Butter Cookies:

  • 1 Tablespoon Peanut Butter
  • 1 Tablespoon Unsalted Butter
  • 1/2 Teaspoon Vanilla Extract
  • 1 Tablespoon Sweetener
  • 1 Large Egg
  • 2 Tablespoons (14g) Coconut Flour
  • 1 Tablespoon (7g) Almond Flour
  • 1/2 Scoop (15g) The Protein Chef’s Baking Protein Powder (or Any Protein Powder)
  • Pinch of Salt

Calories in each cookie:

  • Calories: 389
  • Fat: 25g
  • Saturated Fat: 10g
  • Sodium: 142mg
  • Carbs: 15g Net Carbs = 8g
  • Fiber: 7g
  • Sugar: 3g
  • Protein: 26g

How to make:

  1. Melt your Butter
  2. Mix together your melted Butter and Peanut Butter until smooth
  3. Combine and mix everything together
  4. Coat a plate with some non-stick cooking spray and add your mix onto it
  5. Shape your cookie and top it with whatever you want
  6. Microwave for :45-:60 seconds depending on how powerful your microwave it

Tip:

  • Make 2-3 servings out of it!
