Candy canes are not just for decoration! These Candy Cane Protein Pancakes are fun to make, packed with holiday flavor, and packed with great macros! If you like the taste of a candy cane then you’re going to LOVE this quick recipe.
Start this recipe by taking out either a food processor like this or blender. This is used to fully incorporate your candy cane, you don’t want chunks of candy cane in your recipe!
Add into your food processor or blender 1 broken up candy cane, 1 scoop of a vanilla protein powder, 1/2 teaspoon of peppermint extract, 1 teaspoon of vanilla extract, 1 large whole egg, 2 large egg whites, 3/4 cup of rolled oats, 1/2 cup of cottage cheese, 1/4 teaspoon of salt, and 1 teaspoon of baking powder.
Process or blend everything together until your mix candy cane protein pancakes mix is smooth.
You can easily add color to some or all of your pancakes by mixing in a couple drops of red food coloring.
Candy Cane Pancakes
Take out a stovetop pan or griddle, turn your burner on medium heat, and coat it with some non-sticking cooking spray.
Pour your mix on once your pan or griddle heats up and cook each side of your candy cane protein pancakes for 2-3 minutes. Keep in mind that cooking time may change depending on how big or small you made your pancakes.
Did you know that cottage cheese is pretty much tasteless when combined with flavorful ingredients? It also adds a ton of slow digesting (casein) protein to the recipe.
Remove your candy cane protein pancakes from the heat and top them! I usually go with some fat free whipped cream and sugar free syrup for this recipe. Let us know your favorite healthy holiday pancake toppings in the comments below.
