Baked Bacon Cornbread Chicken Recipe

With a crispy outer cornbread shell, a hint of bacon, and a ton of protein…can you really go wrong? This Baked Bacon Cornbread Chicken recipe is just as good as it sounds!

Here is the recipe:

  • 4 Pounds (64 Ounces) Chicken Breast
  • 4 Tablespoons Olive Oil
  • 2 Extra Large Eggs
  • 2 Tablespoons (42g) Honey
  • 8 Tablespoons (56g) Bacon Bits
  • 1 1/2 Cups (198g) Cornmeal
  • 6 Tablespoons (48g) Wheat Germ
  • 1 Teaspoon Salt

  • Sodium: 2130mg
  • Carbs: 187g
  • Fiber: 36g
  • Sugar: 38g
  • Protein: 432g

Calories in each Plate (if you make 10):

  • Calories: 334
  • Fat: 9.7g
  • Saturated Fat: 1.4g
  • Sodium: 213mg
  • Carbs: 18.7g
  • Fiber: 3.6g
  • Sugar: 3.8g
  • Protein: 43.2g

Take out your Chicken Breasts, trim the fat off of them, and then cut them in half. Combine your Olive Oil, Eggs, and Honey into a bowl and mix them together. Combine your Cornmeal, Salt, Bacon Bits, and Wheat Germ into another bowl and mix them together. Take out a baking sheet and coat it with some non-stick cooking spray. Flip each piece of Chicken around a few times in your wet mix and then a few times in your dry mix and place it on your baking sheet. Cook on 400°F/206°C for 30:00-35:00. Enjoy!


  • If there’s leftover wet or dry mix, evenly distribute it over the top!
