Start this recipe by taking out your favorite mug and coating the inside of it with some non-stick cooking spray. If you’re doubling or tripling the recipe make sure to use a BIG mug or other bowl/dish.

Add right into your mug 1 large whole egg, 1 teaspoon of vanilla extract, 3 tablespoons of coconut flour, 1/2 of a ripe banana, 1 scoop of a vanilla protein powder, 1/2 tablespoon of brown rice syrup, 1/8 teaspoon of salt, 1/4 teaspoon of baking powder, and 1/2 container of a vanilla Greek yogurt.

Want to cut down on the fat in this birthday cake protein mug cake recipe? Use 2 large egg whites instead of 1 large egg.

Mix all of those ingredients together until smooth.

Did you know that brown ricer syrup has the same sweetness as sugar, is free of fructose, and has a low glycemic level?

Top your birthday cake protein mug cake with 1 teaspoon of rainbow sprinkles and put it right into the microwave!

Microwave your mug cake for :30 seconds, lightly mix everything together, and microwave it an additional :90 seconds.

Depending on how powerful your microwave is and/or the size of your recipe you may need to microwave it for more or less time. Keep an eye on it and remember how long it took for next time.

Mine turned out dry as ever the first go around, so I remade it adding a few splashes of unsweetened almond milk and cooked in the wave for 30 sec less. Taste pretty good. Thanks.
