Blueberry Protein Mug Cake

Are you craving a blueberry dessert on your diet? Crave no longer with a Blueberry Protein Mug Cake! This microwave dessert recipe is quick to make, absolutely delicious, and guaranteed to hit those cravings!

Start this recipe by coating your favorite mug with some non-sticking cooking spray. If you don’t have a mug, a bowl or anything microwave safe should work.

Add into your mug 1 1/2 large egg whites or 4 1/2 tablespoons of liquid egg whites, 1 scoop of a vanilla protein powder, 1 teaspoon of vanilla extract, 1/2 tablespoon of honey, 3 tablespoons of coconut or oat flour, 1/4 teaspoon of baking powder, 1/8 teaspoon of salt, 1/8 cup of fresh blueberries, and 1/2 container of a blueberry Greek yogurt.

Make sure to use fresh and not frozen blueberries. Frozen blueberries will add too much water to the recipe

Mix all of those blueberry protein mug cake ingredients together until smooth.

Microwave your mug cake for :30 seconds, mix everything around again, and microwave it for an additional :60 seconds.

Keep in mind that microwave time will vary depending on how powerful your microwave is. The more powerful it is, the less time it’ll take.

Remove it from the microwave, optionally pop it out, and top it! I like topping my blueberry protein mug cake with the other 1/2 container of Greek yogurt and some fresh blueberries. Let me know what your favorite topping(s) are in the comments below.

    One question, whenever I make one of your mug cakes, the top/middle of it is always not fully done. And if I microwave it a bit more then the rest of the cake becomes too chewy… Any suggestions?
