Cheesy! Chicken! Meatballs! These Cheesy Chicken Low Carb Meatballs are high protein, packed with flavor, easy to make, and GREAT for meal prep. This healthy meatball recipe made using simple ingredients is guaranteed to win your diet over.
Add into a bowl 1 pound of ground chicken, 1 large whole egg, 3 ounces of cream cheese, 1/2 cup of seasoned bread crumbs, 8 tablespoons of grated parmesan cheese, 1 tablespoon of Italian seasoning, 2 teaspoons of minced garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper.
Don’t like or have access to ground chicken? Use lean ground beef or turkey!
This recipe makes around 12 low carb meatballs so if you want more than that, double or triple the recipe using the scale below.

Baked Low Carb Meatballs
Take out a baking sheet or dish, coat it with some non-stick cooking spray, and shape your cheesy chicken low carb meatballs. You can make your meatballs whatever size you want but keep in mind that the bigger your meatballs are, the longer they’ll take to cook.
Put your cheesy chicken low carb meatballs into the oven on 450F/232C for 15-20 minutes depending on how big or small you made them.
Pro tip? Use a food thermometer to check if they’re done and pull them out once they reach 165F/73C.
Remove them from the oven and eat them as is, with pasta, over quinoa or rice, vegetables, and so on. Compliment them with whatever will fit your macros that day.
My favorite way to eat these? With a little low sugar pasta sauce and grated parmesan cheese.
