We’re sending our rice on a double date with dessert and making a quick Creamy Protein Rice Pudding! This healthy recipe can be made on the stove or if you’re strapped for time? The microwave!
Start this one by choosing how you’d like to prepare it, on the stove or in the microwave. Both have a delicious end result.
Stovetop Rice Pudding
We’ll start with the stove! Add into a pan 2 cups or 1 package of your choice cooked rice and 1 1/2 cups of a milk substitute. I’m using white rice here.
What rice? You can make the rice yourself, use leftover rice, or the :90 second precooked rice, it doesn’t matter.
If you want to level up the protein rice pudding recipe you can make your rice prior with milk (we talk about this below). With that said, I almost always use leftover or precooked rice.
Continue by covering and cooking that over medium heat until it begins to boil.
Once boiling, uncover it and let it simmer on low heat for around 10-15 minutes. Make sure to keep it moving every so often so that it doesn’t “burn”.
After the rice looks fluffy, remove it from the heat.
From here, add in 1/2 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, 1-2 tablespoons of your favorite sweetener, 1 tablespoon of coconut flour, and 3 scoops of a good tasting vanilla protein powder.
Mix those ingredients together until it looks like this…
If your creamy protein rice pudding dries out too much you can add in a bit more milk to keep it “creamy”.
Microwave Rice Pudding
To make this in the microwave you’re going to use 1 cup of rice (I went brown), 1/2 cup of milk, 1/4 teaspoon of ground cinnamon, and 1/2 teaspoon of vanilla extract.
Give those a mix and microwave them for around 2-3 minutes.
Last, mix in a tablespoon of sweetener, 1/2 tablespoon of coconut flour, and 1 1/2 scoops of protein powder.
The stovetop version here makes 2 servings and the microwave version makes 1. You can double the microwave recipe if you want but since it’s quick I usually like making it single serving.

Instructions
Stovetop
- Add your Rice and Milk into a pan
- Mix them together and cover over medium heat
- Once boiling, uncover, and let it simmer on low heat for around 10-15 minutes
- Remove it from the heat and mix in your Ground Cinnamon, Vanilla Extract, Sweetener, Coconut Flour, and Protein Powder
- Add more milk as needed if your flour/powder dry it out too much
Microwave
- Mix together your Rice, Milk, Ground Cinnamon, and Vanilla Extract
- Microwave for around 2-3 minutes
- Mix in your Sweetener, Coconut Flour, and Protein Powder
Make Your Own Rice
- Bring all of your ingredients to a boil
- Cover and reduce your heat
- Let everything simmer until fluffy while occasionally stirring everything around so that it doesn't burn

Is there any particular reason why the “make your own rice” variation doesn’t include protein powder?
