Five dollars for 2 or $5.00 for 12 or more in the same amount of prep time as it takes to get through the drive-thru, the choice is yours with these super easy to make Egg White Bites! This quick meal prep friendly recipe is packed with protein and has endless variations so that you’ll never get bored.

The first thing you’ll need is a blender or food processor. Add right into it, 2 1/2 cups of egg whites, 1/2 cup of ricotta or cottage cheese, 1/2 cup of cheese, and 1/2 teaspoon of a seasoning which we’ll talk more about below.

Blend or process that mix for around :20-:30 seconds. Your mix should be completely smooth.

As for your cheese? Use whatever you want here! This could be a blend, cheddar, feta, and so on.

Next, you’ll need is a muffin or cupcake pan. Whatever size you want is completely up to you, I’m using one of these 24 mini spot pans (linked below). I like the convenience of the smaller egg white bites but if you want bigger ones, use a regular or jumbo pan! Silicone cups work great too.

Coat whatever you’re using with cooking spray and choose your fillings! I typically go with bacon bits or other precooked meat for more protein, chopped up bell peppers, onions, and spinach.

You can really customize these egg white bites however you want! This recipe is more of an easy and convenient idea to get some more protein in. They also taste great both hot or cold which makes them awesome for meal prepping.

Evenly distribute your egg white mix, filling each spot up almost all the way up.

After you’ve added all your ingredients in, put them into the oven on 350F/176C for around 20-30 minutes depending on the size pan you used. The bigger your egg white bites are, the longer they’ll take to cook.

Now I mentioned we’d talk about “seasonings” so here are some of my other favorite variations! Use your best judgement on the amounts, 1/4-1/2 teaspoon of seasoning should be enough.

  • Denver: Deli Ham + Green Bell Peppers + Diced Onions + Sharp Cheddar + Black Pepper
  • Garden Veggie: Finely Chopped Broccoli + Shredded Carrots + Garlic Powder + Parmesan
  • Southwest: Chorizo or Black Beans + Pickled Jalapeños + Pepper Jack Cheese + Scallions + Taco Seasoning
  • Bistro: Roasted Red Peppers + Goat Cheese + Fresh Basil + Pinch of Nutmeg
  • Forager: Sautéed Mushrooms + Swiss Cheese + Fresh Thyme + Caramelized Onions
  • Caprese: Cherry Tomato Halves + Pearl Mozzarella + Pesto Swirl + Red Pepper Flakes
  • Smoky Morning: Turkey Sausage + Smoked Gouda + Chives + Smoked Paprika
  • Coffee Store Copycat: Roasted Red Peppers + Cottage Cheese + Monterey Jack + Hot Sauce

Outside of all of the variations you can make, my biggest tip for these is to make a big batch and freeze them. When you’re ready to eat them, put them in the microwave for :30-:45 seconds. If you keep them in the fridge, they should last around 3-5 days.

Ingredients

  • 2 ½ Cups Liquid Egg Whites
  • ½ Cup Ricotta Cheese - or Cottage Cheese
  • ½ Cup Cheese - Shredded (I like Mexican Blend, Feta, and Cheddar)

Instructions

  • Blend or process your Egg Whites, Ricotta or Cottage Cheese, Cheese, and Seasoning together for :20-:30 seconds
  • Coat a muffin or cupcake pan with some cooking spray (silicone cups work great too!)
  • Evenly distribute your Bacon Bits or other precooked meat
  • Chop, diced, and evenly distribute your choice vegetables
  • Pour in your egg white mix, filling each spot almost all the way up
  • Put them into the oven on 350F/176C for around 20-30 minutes depending on the size of your bites
  • Remove and eat or freeze them
  • To reheat them from frozen, put them into the microwave for :30-:40 seconds

    My family loved these. Made with cottage cheese, ham and peppers with a little cajun seasoning. Would plain greek yogurt work too? Excited to try other variations.
