‘Tis the season of pumpkin or in my case every season is the season of pumpkin and there is always room for a high protein waffle! This Protein Pumpkin Waffles recipe is more than just healthy…it’s DELICIOUS!
Here is the recipe:
- 1 Scoop (30g) Vanilla Protein Powder (or Chocolate for more of a Chocolate Pumpkin taste)
- 1 Teaspoon Vanilla Extract
- 1/2 Cup (122g) Pure Pumpkin
- 3/4 Cup (87g) Fat Free Cottage Cheese (or Greek Yogurt)
- 1/2 Teaspoon Ground Cinnamon
- 2 Large Egg Whites
- 3/4 Teaspoon Baking Powder
- 1 Teaspoon Pumpkin Pie Spice
- 3/4 Cup (60g) Rolled Oats
Calories in the WHOLE recipe:
- Calories: 465
- Fat: 5g
- Saturated Fat: 1g
- Sodium: 514mg
- Carbs: 53g
- Fiber: 9g
- Sugar: 10g
- Protein: 52g
Combine all of your ingredients into a food processor or blender. Process/blender everything together. Turn your waffle maker on, let it heat up, and spray it with non-stick cooking spray. Pour your mix in and let it cook for however long your waffle maker says to. Enjoy!

Tips:
- Top your waffle with sugar free syrup, whipped cream, cool whip, protein frosting, nuts, peanut butter, etc!
