High Protein Fettuccine Alfredo Recipe

This Fettuccine Tuna Alfredo is a healthy, delicious, and high protein alternative to regular Alfredo! Loaded with fiber and great if you’re on a budget!

Here is the recipe:

  • 1/4 Cup (20g) Rolled Oats
  • 2 Can Tuna (Mine were 5 Ounces/142g Each)
  • 1 Tablespoon (14g) Unsalted Butter
  • 1/2 Teaspoon Minced Garlic (or 1 Clove Garlic)
  • 1 1/2 Ounces (42.5g) Mushrooms (Optional)
  • 1 Cup (8 Ounces) Regular Sugar Free Coconut Milk
  • 6 Tablespoons (90g) Fat Free Cream Cheese
  • 1/4 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Parsley
  • 10 Tablespoons (50g) Grated Parmesan Cheese
  • 8 Cups (64 Ounces) Water
  • 1 Package (8 Ounces/224g) Organic Mung Bean Fettuccine

Calories in each Bowl (if you make 4 Bowls):

  • Calories: 373
  • Fat: 10.7g
  • Saturated Fat: 6.5g
  • Sodium: 526mg
  • Carbs: 22.5g
  • Fiber: 11.7g
  • Sugar: 7g
  • Protein: 46.7g

Turn your Rolled Oats into oat flour by blending or processing your oats until they look like flour. Take out your Tuna and drain it. Take out a sauce pan, turn your burner on Medium Heat, and add your Butter into it. Once your Butter melts add in your Minced Garlic and Mushrooms. Stir those around a bit and let them cook for around a minute. After a minute add in the rest of your ingredients aside from your Grated Parmesan Cheese, Mung Bean Fettuccine, and Water. Mix everything together and continue stirring for 2-3 minutes (or until it starts to thicken up). After it starts to thicken up add in your Grated Parmesan Cheese. Mix that in and continue stirring for around a minute. After a minute reduce your heat to Low-Medium and add your Tuna in. Mix your Tuna around and let that cook for around 2 minutes while stirring every 10-15 seconds. Take your Tuna Alfredo off the heat and then take out a large saucepan. Add in and bring 8 Cups of Water to a boil. Once your Water starts to boil reduce your heat to Medium and add in your Mung Bean Fettuccine. Cook your Mung Bean Fettuccine for 8 minutes while stirring it every minute. Drain your Mung Bean Fettuccine and then add your Tuna Alfredo on top. Mouthgasm!


  • Make sure not to use a flavored Coconut Milk!

  • I have to write another comment…made this again tonight holy sh*t!!! So good I can’t even believe it’s healthy!! I altered the recipe by using light laughing cow cheese (66g) instead of fat free cream cheese and half the parmensan cheese. Totally hit the spot!!
