Protein French Toast Pancakes
We’ve done scrambled eggs and scrambled pancakes so now it’s time to do some scrambled Protein French Toast Pancakes! They’re just as easy to make (if not easier!), have better macros per serving, and the end result is absolutely delicious. If you’re looking for a new and healthier breakfast recipe, this is the one to try!
The first thing you’ll need to do is to choose a bread that fits your macros. This could be a regular bread, thick cut one like I’m using today (Texas toast), low carb or calorie, high protein, and so on. I’ve used them all and they all work great!
Start by cutting whatever bread you choose up into small pieces, you should get around 9 pieces per slice.
Once that’s done, take out a mixing bowl. This should be a bowl that’s big enough to fit all of your French toast pancake pieces.
Add right into that mixing bowl 1/2 cup of Greek yogurt, 1/2 cup of milk, and 1 scoop of a good tasting protein powder. Mix those together until smooth.
Make sure to mix and match your flavors! For example, vanilla greek yogurt with vanilla protein powder. Some of my other favorite combinations for these French toast pancakes recipe?
French Toast Pancakes
- Salted caramel Greek yogurt with a cinnamon protein powder
- Red velvet Greek yogurt with chocolate protein powder
- Banana Greek yogurt with vanilla protein powder
- Honey Greek yogurt with peanut butter protein powder
Continue by adding in 2 large whole eggs, 2 tablespoons of a sugar free or light syrup, 1 teaspoon of vanilla extract, and 1/2 teaspoon of ground cinnamon. Mix all of those ingredients together.
P.S. If you want them sweeter or your protein powder isn’t sweet enough, mix in a little sweetener!
From here, dump in your bread pieces and move them around a bit so everything soaks up. This should only take around a minute. You don’t want them too soggy so make sure not to let them soak for too long.
Add in some butter, oil, or cooking spray into a stovetop pan or griddle over medium heat.
Once it heats up, take some of your pieces and put them into your pan or griddle. You can make these protein French toast pancakes whatever size you want.
Let each side cook for around 2-3 minutes. You’ll know they’re done when they look like this…
The benefit of making your French toast this way is that your pieces will absorb more of the mix giving you even better macros and protein per “slice”.
Pro tip? You can make your mix the night before so it’s ready to go in the morning!

Ingredients
- 3 Pieces Bread - Your Choice
- ½ Cup Greek Yogurt - Use a high protein one!
- ½ Cup Milk - or Milk Substitute
- 1 Scoop Protein Powder
- 2 Large Whole Eggs
- 2 Tablespoons Syrup - Light/Sugar Free
- 1 Teaspoon Vanilla Extract
- ½ Teaspoon Ground Cinnamon
- ½ Tablespoon Butter - Oil, or Cooking Spray (less calories)
Instructions
- Chop up your Bread into small pieces (9 pieces per slice is good)
- Mix together your Greek Yogurt, Milk, and Protein Powder until smooth
- Mix in the rest of your ingredients until smooth aside from your Butter
- Dump your pieces of Bread into your mix and move them around to soak up your mix
- Add some Butter, Oil, or Cooking Spray onto a pan or griddle over medium heat
- Place your pieces onto your pan or griddle once it heats up making them however big you want
- Let each side cook for around 2-3 minutes
- Repeat until your mix is gone
