It’s time to eat more cupcakes this holiday season! Not just any cupcakes, Christmas Protein Cupcakes that are low carb, packed with fiber, and super easy to make. This holiday cupcakes recipe is delicious and will help save your diet this year!

For this recipe all you need is 2 bowls (unless you only want 1 color) and something to mix your ingredients with.

In your first bowl add 2 large whole eggs, 1 teaspoon of vanilla extract, 1/4 teaspoon of nutmeg, 1/2 teaspoon of ground cinnamon, 1 tablespoon of maple syrup, 1/2 cup of milk or milk substitute, 1 1/2 scoops of a vanilla protein powder, 1 cup of coconut flour, 1 container of Greek yogurt (we talk about flavors below), and 2 teaspoons of baking powder.

Mix all of those ingredients together good. Using a hand mixer will make this part a bit easier and if your mix comes out too thick, add a little more milk or milk substitute into your mix.

You can use whatever flavor Greek yogurt you want as long as it compliments the rest of the flavors in the recipe. Think outside the box and you’ll have endless Christmas cupcake variations!

Greek Yogurt Flavors

  • Vanilla
  • Maple
  • Salted caramel
  • Seasonal flavors like sugar cookie!

Add half of your mix into your other bowl with a couple drops of some green food coloring and mix those together until green. The more food coloring you use, the darker your color will be.

Add in a couple drops of some red food coloring into your first bowl that now has the other half of your mix and mix that in until red.

Take out a baking sheet and some silicone cups or a cupcake pan coated with non-stick cooking spray and evenly distribute your mix in. You should fill your spots about 3/4 of the way up.

Bake your Christmas protein cupcakes on 350F/176C for around 25-30 minutes depending on how big you made them.

Remove your Christmas protein cupcakes from the oven and top them with whatever you want! I went with some simple whipped cream and colored sprinkles today.

Ingredients

  • 2 Large Whole Eggs - or 4 Large Egg Whites
  • 1 Teaspoon Vanilla Extract

Instructions

  • Add all of your ingredients into a bowl aside from your Green and Red Food Coloring
  • Mix everything together until thick (if it’s super thick then add a bit more milk)
  • Take out another bowl and put half of your mix into it
  • Add some Green Food Coloring into that half of your mix and mix it in
  • Add some Red Food Coloring to the other half and mix it in
  • Take out a baking sheet, place your silicone cups onto it (or just use a cupcake pan), and coat them with some non-stick cooking spray
  • Evenly distribute your mix into them making sure that they are all level
  • Bake on 350F/176C for 25-30 minutes
  • Once they cool top them with some whipped cream and sprinkles!
