Protein Holiday Cupcakes Recipe

The holiday season means it’s time to kick back, relax, and eat more cupcakes! These Protein Holiday Cupcakes are delicious, fun to make, and come with a TON of fiber!

Here is the recipe:

  • 2 Large Eggs (or 4 Large Egg Whites)
  • 1 Teaspoon Vanilla Extract
  • 1/4 Teaspoon Ground Nutmeg
  • 1/2 Teaspoon Ground Cinnamon
  • 1 Tablespoon Maple Syrup
  • 1/2 Cup (4 Ounces) Unsweetened Vanilla Almond Milk (or Regular Milk/Other Milk Substitute)
  • 1 1/2 Scoops (45g) Vanilla Protein Powder
  • 1 Cup (120g) Coconut Flour (or Oat Flour)
  • 5.3 Ounces (150g) Fat Free Vanilla Greek Yogurt (or Cottage Cheese)
  • 2 Teaspoons Baking Powder
  • Green Food Coloring
  • Red Food Coloring

Calories in the WHOLE recipe:

  • Calories: 1013
  • Fat: 33g
  • Saturated Fat: 19g
  • Sodium: 744mg
  • Carbs: 91g
  • Fiber: 48g
  • Sugar: 25g
  • Protein: 88g

Calories in each cupcakes (if you make 8):

  • Calories: 126
  • Fat: 4.1g
  • Saturated Fat: 2.3g
  • Sodium: 93mg
  • Carbs: 11.3g
  • Fiber: 6g
  • Sugar: 3.1g
  • Protein: 11g

How to make:

  1. Add all of your ingredients into a bowl aside from your Green and Red Food Coloring
  2. Mix everything together until thick (if it’s super thick then add a bit more milk)
  3. Take out another bowl and put half of your mix into it
  4. Add some Green Food Coloring into that half of your mix and mix it in
  5. Add some Red Food Coloring to the other half and mix it in
  6. Take out a baking sheet, place your silicone cups onto it (or just use a cupcake pan), and coat them with some non-stick cooking spray
  7. Evenly distribute your mix into them making sure that they are all level
  8. Bake on 350F/176C for 25-30 minutes
  9. Once they cool top them with some whipped cream and sprinkles!

Tips:

  • Don’t like whipped cream? Top them with Greek yogurt or protein frosting instead!
  • Make them however big or small you want them but just remember to adjust your baking times accordingly!
