Protein Pancake Mug Cake

We’re back and we’re back with one of our quickest “recipes” to date, a Protein Pancake Mug Cake! This one is more of a quick idea than it is a recipe however if you’ve got a microwave, 3 simple ingredients, and 1 minute of time…you won’t regret it.

All you need to make this one is a microwave safe bowl, 1/2 cup of a just add water pancake mix, 1 scoop of your favorite flavor protein powder, and 3-4 ounces of a milk or milk substitute.

I’ve tried over 10 “just add water” pancake mixes and they’ve all worked so don’t be scared to try this one! You can also make your own with the following ingredients:

Homemade Pancake Mix

  • 1 Cup All Purpose Flour
  • 1-2 Tablespoons Sweetener
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Salt
  • 2 Tablespoons Buttermilk Powder *Optional

Double or triple this recipe as needed. Make sure to only use 1/2 cup of it for this protein pancake mug cake.

Mix those 3 ingredients together until smooth, it shouldn’t be too thick. For a reference point, you should still be able to easily pour it. If it appears to be too thick, add a little bit more milk or milk substitute to thin it out.

Moving on, coat your microwave safe bowl with a little optional cooking spray and pour your mix in. If you mixed it inside of your microwave safe bowl (save time on dishes!), you can skip this step.

From here, add in whatever you want for texture or flavor in your protein pancake mug cake. I went with some sugar free mini chocolate chips. Drop what you ended up using or your favorites in the comments below!

Put that into the microwave for 1 minute. It may take more or less time depending on how powerful your microwave is so keep an eye on it.

The end result for your protein pancake mug cake should be light and super fluffy, not dry at all. If it’s dry, drop your microwave time on the next one.

The biggest tip for this one? The flavor of your protein will be the flavor of your “pancake”.

  • Mix everything together (add more milk as needed if you mix isn't "smooth")
  • Add in whatever you want
  • Microwave your bowl for 1 minute (it may take more or less time depending on how powerful your microwave is so keep an eye on it)
  • Too dry? Drop your time!
