Protein Shamrock Pancakes

Looking for a way to start your Saint Patrick’s Day off right? Try these delicious and healthy Protein Shamrock Pancakes! This holiday pancake recipe takes just a few ingredients to make and is packed with protein!

Since we’re using rolled oats and cottage cheese for this one you’re going to need either a food processor or blender.

Add into what you’re using 1 large whole egg, 2 large egg whites, 1 tablespoon of white chocolate chips, 1 teaspoon of vanilla extract, 1/2 teaspoon of mint extract, 3/4 cup of rolled oats, 1 1/2 scoops of a vanilla protein powder, 1/4 teaspoon of salt, 1 teaspoon of baking powder, 1/2 cup of cottage cheese, and a couple optional drops of some green food coloring.

Make sure to use mint extract and not peppermint extract. Peppermint will give your protein shamrock pancakes a completely different flavor.

Blend or process all of those ingredients together until smooth, this shouldn’t take long.

Take out a pan or griddle, turn your burner on medium heat, and let your pan or griddle heat up.

Shamrock Pancakes

Coat your pan or griddle with some non-stick cooking spray once it heats up, pour your mix in, and cook each side of your protein shamrock pancakes for around 2-3 minutes.

You can make your pancakes as big or as small as you want but remember that your cooking time will change depending on their size. Keep an eye on them and remember how long they took for next time.

Repeat until all of your mix is gone.

Making multiple sets of pancakes? Make sure to coat your pan or griddle with non-stick cooking spray for every new set!

Ingredients

  • ½ Cup Cottage Cheese - Fat Free

    The “Base” of this recipe is excellent! I’m not much on mint flavored pancakes, so I decided to give them a shot. I omitted the mint extract, green coloring, & white chocolate chips. An added tsp of cinnamon was a great addition. They were ridiculously good! It’s my go-to pancake recipe!
