Strawberry shortcake for breakfast is here with these Strawberry Shortcake Protein Pancakes! This healthy pancake recipe is packed with shortcake flavor, easy to make, and a great alternative to the “real” thing!

All you need for this one is a bowl to mix your ingredients in, something to cook them on like a stovetop pan or griddle, and your appetite to eat them!

Add right into your bowl 1 large whole egg, 3 large egg whites or 9 tablespoons of liquid egg whites, 1 teaspoon of vanilla extract, 2 scoops of a vanilla protein powder, 4 crushed up reduced fat wafers, 1/2 container of a strawberry Greek yogurt, 8 tablespoons of coconut flour, 1 teaspoon of baking powder, and a couple chopped up fresh strawberries.

Did you know that coconut flour is a great source of fiber with 5 grams for every 60 calories?

Mix all of those ingredients together until your strawberry shortcake protein pancakes mix is smooth.

Take out your stovetop pan or griddle, turn your burner on medium heat, and coat it with some non-stick cooking spray.

Pour your mix in and cook each side of your pancake for around 2-3 minutes. Keep in mind that this time could change depending on how big you made your strawberry shortcake protein pancakes.

Repeat until your mix is gone.
