Cottage Cheese Protein Brownie
A quick and healthier dessert recipe is here! This Cottage Cheese Protein Brownie is made with 7 simple ingredients and only takes a couple minutes to make in the microwave. If you’re looking for something to beat the cravings, try one of these delicious and diet friendly brownies!
You’re going to start this one with a blender or food processor and a microwave safe bowl. If you don’t care about the cottage cheese texture you can make this right in your bowl.
In whatever you’re using, add 1/2 cup of cottage cheese, 1 scoop of good tasting chocolate protein powder, 2 tablespoons of cocoa powder, 2 teaspoons of sweetener, 1 teaspoon of baking powder, a pinch of salt, and some milk.
Blend or process all of those ingredients together until smooth.
The amount of milk you add will depend on what your mix looks like, start with 1-2 ounces and go from there. As a reference point, you’ll want it somewhat thick but not “soupy”
Cottage Cheese Brownie Flavors
You can also use any flavor protein powder you want as long as you think it’ll compliment the brownie flavor. Some other flavors I’ve used?
- Red Velvet
- Chocolate Caramel
- German Chocolate Cake
- Brownie (obviously!)
From here, coat your microwave safe bowl with cooking spray and pour your mix in. Coating your bowl with cooking spray is only needed if you want to remove your brownie from your bowl.
This is the part where you can mix in or top it with sugar free chocolate chips, nuts, or anything else you’d like in your cottage cheese protein brownie.
Last, put it into the microwave for around 1-2 minutes depending on how powerful your microwave is.
While it’s microwaving make sure to keep an eye on it the first time you make it so you don’t microwave it for too long which will give you a dry brownie.

- Don’t have or like microwaving things? Bake this in the oven on 350F/176C for around 15-20 minutes.

Instructions

This recipe came out very tasty but I made a lot of changes because I don’t have whey protein powder. I just have egg white protein powder which is unflavored. So these are the changes I made and if someone needs it’s a good recipe but tasted more like a flourless chocolate souffle cheesecake and not like a brownie. But again, it’s because of the changes I made and because the egg white protein powder makes it airy and light
280g cottage cheese
139g water
68g egg white protein powder (flavorless)
8g baking powder
Salt and vanilla extract and 1 tsp instant coffee powder
99g erythritol
31g unsweetened cocoa powder
It cooked at 160°C for 25 min in the oven. I wanted a bigger recipe so I converted the measurements to give me a standard size brownie.
Overall I liked but again, this came out like a flourless chocolate souffle cheesecake, but it’s light and delicious!
On my first attempt, my delusional post-bariatric surgery self somehow misread 2tsp of sweetener as 2tbs. Oops. Remade it properly and it’s delicious! Perfect for the pureed food stage after weight loss surgery.

Hi Kate! Within all my recipes there’s “metric” conversions which always list the exact weight of the ingredients I used. In this case, 1 scoop is equal to 30 grams. Hope this helps!
For those of us without microwave, what would be the oven cook temp/time?
350F/176C for 15-20 minutes should do it though I’d keep an eye on it as it may take more or less time.
