Not so friendly holiday eating is here and pumpkin is in everything! Today, we keep the pumpkin but work on the not so friendly part. If you’re looking for a quick seasonal dessert with 5 ingredients or less that’s packed with protein and low in calories then you’re going to love this Easy & Healthy Microwave Pumpkin Pie recipe!

Start this one by adding into a mixing bowl 1 large whole egg, 1/2 cup of pumpkin, 1/2 scoop of a complimenting flavor protein powder, a little pumpkin pie spice, and a little sweetener.

If your protein powder is already “sweet” you may be able to do without the sweetener.

Mix all of those ingredients together until smooth (no clumps).

Take out a microwave safe dish, coat it with some non-stick cooking spray, and pour your mix in. I used a 9oz/266ml ramekin.

Top your healthy microwave pumpkin pie with whatever you want like some nuts, chocolate chips, bacon, and so on.

Last, put it into the microwave for around 2-3 minutes depending on how powerful your microwave is!

You don’t have to but you can optionally give it a quick mix after :30 seconds to help it “cook” more evenly.

Baked Healthy Pumpkin Pie

Don’t have or like the microwave? Want a crust? BAKE IT!

To make this in the oven with a crust all you need to do is add some graham cracker crumbs and melted butter into the bottom of your dish.

Mix together and “pack” in your crust into the bottom. I use the back of a spoon or my hands to do this.

Pour your mix in and bake it on 350F/176C for around 30-35 minutes.

Pro tip? Bake your crust for 10 minutes before adding your crust in!
