High Protein Cottage Cheese Queso

We’re back with another quick 5 minutes recipe, a High Protein Cottage Cheese Queso! This dip is made with 3 simple ingredients and takes no time at all to prep. If you’re looking for a healthy appetizer and/or snack, try this!

The first thing you’ll need for this one is something to get your cottage cheese smooth. I usually go with a food processor but a blender works great too.

Add right into whatever you’re using 1 cup of cottage cheese and 1 tablespoon of a low sodium taco seasoning mix. You can find low/salt free taco seasoning mixes at most grocery stores nowadays or make your own with the following recipe…

Homemade Taco Seasoning Mix

*Double or triple this recipe and have access to it whenever you need it!

  • 1 1/4 Tablespoons Chili Powder
  • 1 1/2 Teaspoons Ground Cumin
  • 3/4 Teaspoon Black Pepper, Paprika
  • 1/2 Teaspoon Garlic Powder, Onion Powder, Oregano, Salt
  • 1/4 Teaspoon Crushed Red Pepper

Process or blend until your mix is creamy. You can add in a little water if it seems too thick when you’re mixing it.

Continue by mixing in 1/2 cup of cheese, I like either cheddar or Colby jack.

Here is where you can optionally mix in anything you want to change up the flavor and/or texture. Some of my favorites?

  • Diced/Pickled Jalapeños
  • Onions (Green!)
  • Fire Roasted Diced Tomatoes
  • Cilantro
  • Crushed Red Pepper
  • Chili Powder

Now to melt your high protein cottage cheese queso cheese you have 2 options.

Microwave Queso

The first option is in the microwave. To do this you’ll need to pour your mix into a microwave save bowl then put it into the microwave for 1-2 minutes.

Make sure to mix everything around every :20-:30 seconds so it heats up evenly.

Stovetop Queso

The second option is on the stovetop over low heat for a few minutes. As long as you keep it moving until warm, you’ll be good to go!

Regardless of the method you use, you’ll know it’s done when it looks like this…

A couple tips for this one?

  1. You can double or triple the recipe below in the recipe card if you’re bringing it to a party.
  2. Mix in a cooked protein like some rotisserie chicken, lean beef, or canned tuna.
  3. Top it with pico de gallo or salsa!

This was SO good. I made it with cheddar and ate it with some protein pretzels I had leftover.
