Reimagine your favorite pie into a healthy and easy to make breakfast recipe! This Protein Pecan Pie Oatmeal is packed with all the right flavors, takes just minutes to make, and tastes great hot or cold!
Unless you plan to make your oatmeal on the stove all you’re going to need for this one is a microwavable bowl and a microwave! If you don’t have a microwave, here’s a link to the one I’ve been using lately and recommend.
Add right into your microwavable bowl 1/2 cup of rolled oats, 1/2 cup of unsweetened vanilla milk substitute, and 1/4 cup of water.
Give those ingredients a quick mix and microwave your oatmeal for around 2 minutes. Depending on how powerful your microwave is this may take more or less time so keep an eye on it.
Continue by adding into your oatmeal right after the microwave (you want it to be hot!) 1 scoop of a vanilla protein powder, 1/2 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, 1/2 tablespoon of honey, 2 tablespoons of a sugar free syrup, and a 1/2 ounce of chopped pecans.
Mix until everything for your protein pecan pie oatmeal is well incorporated.
Your protein oatmeal is now ready to eat! I like to top mine with some sugar free caramel dip or syrup.
Pro tip? Thicken it up even more by throwing it in the fridge for a bit.
Level up this recipe even more and mix into it some of our Low Fat Pumpkin Butter!
