Ingredients

  • 3 Large Whole Eggs
  • 2 Large Egg Whites
  • 4 Tablespoons Parmesan Cheese20g
  • ¼ Cup Mexican Cheese28 Reduced Fat (or Whatever Cheese You Want)
  • ¼ Cup Cottage Cheese113g
  • 3 Teaspoons Chili Sauce15g
  • 1 Tablespoon Bacon Bits7g

Instructions

  • Combine all of your ingredients aside from your Bacon Bits into a bowl
  • Mix everything together until tit’s smooth
  • Take out a large or mini muffin pan and coat it with some non-stick cooking spray
  • Sprinkle your Bacon Bits on top
  • Bake on 350F/176C for 20 minutes

    Derek, I’m gonna start calling you “da Muffin Man”! Some good ideas in here. I never thought about putting cottage cheese into them. Kind of an omelette in a muffin shape!
