Oatmeal Skillet Protein Cookie Recipe

This Oatmeal Skillet Protein Cookie recipe is loaded with fiber, high in protein, absolutely delicious, and big enough to satisfy the biggest sweet tooth!

Here is the recipe:

  • 2 Cups (160g) Rolled Oats
  • 12 Tablespoons (84g) Coconut Flour
  • 1/4 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1/2 Cup (122g) Unsweetened Apple Sauce
  • 1/2 Cup (4 Ounces) Unsweetened Vanilla Almond Milk (or Regular Milk/Other Milk Substitute)
  • 2 1/2 Scoop (75g) Vanilla Protein Powder
  • 1/2 Tablespoon (7g) Coconut Oil
  • 1 Tablespoon (21g) Honey
  • 2 Tablespoons (32g) Sugar Free Chocolate Syrup
  • 3 Tablespoons (45g) Sugar Free Caramel Dip
  • 1 Tablespoon (15g) Sugar Free Chocolate Chips
  • 2 Tablespoons (5g) Jet Puffed Marshmallow Bits

Calories in the WHOLE recipe:

  • Calories: 1728
  • Fat: 48g
  • Saturated Fat: 27g
  • Sodium: 918mg
  • Carbs: 213g
  • Fiber: 50g
  • Sugar: 49g
  • Protein: 111g

Calories in each piece (if you make 4 pieces):

  • Calories: 432
  • Fat: 12g
  • Saturated Fat: 6.7g
  • Sodium: 229.5mg
  • Carbs: 53.2g
  • Fiber: 12.5g
  • Sugar: 12.2g
  • Protein: 27.7g

Combine all of your ingredients aside from your Coconut Flour, Caramel Dip, Chocolate Chips, and Marshmallow Bits into a bowl. Mix everything together. Add in your Coconut Flour and mix that in. Take out at least a 10’’ skillet and pour your mix in. Press your cookie mix into your skillet. Top with your Caramel Dip (evenly distribute it), Chocolate Chips, and Marshmallow Bits. Bake on 350°F/176°C for 20:00-25:00. Mouthgasm!


  • Use Chocolate Protein Powder for a chocolate tasting cookie!
  • Top it with some Greek Yogurt, Peanut Butter, Protein Frosting, or anything else you can think of!
