So I’ve been on an air fryer kick lately which means it’s time to make another quick meal prep! That meal prep? An Air Fryer Parmesan Crusted Chicken made using ingredients you can likely find anywhere! This one takes 15 minutes or less and will last you the whole week.

Start this with one by taking out 2 pounds of chicken breast, trimming the fat off, and cutting them in half horizontally. Alternatively for a larger piece, you could pound them down to 1/2’’ thickness.

Season each piece with a little salt, black pepper, and garlic powder. I usually use around 1/2 teaspoon of salt and black pepper and 1-2 teaspoons of garlic powder. Use however much seasoning you like!
From here, take out 2 bowls. A medium for your bread crumb mix and a small one for your parmesan mix.
In your medium bowl, add 1 1/2 cups of panko bread crumbs (also called Japanese style), 1 teaspoon of Italian seasoning, and 1/2 teaspoon of paprika. Mix those together.

In your small bowl, add 6 tablespoons of a light or fat free mayonnaise, 2 tablespoons of plain Greek yogurt, 1 tablespoon of mustard, and 1/2 cup of grated parmesan cheese. Mix those together.
Once mixed, evenly spread your parmesan mix over each piece of chicken. I do this either with a spoon by evenly smoothing it out or my hands.

Last, press your panko mix in also by using your hands or flip your chicken around in it until it’s fully coated. To maximize the crisp, you can hit the top of your pieces with a little cooking spray. No, it’s not needed but the option is there if you can afford the extra calories!
Hit your air fryer basket with some cooking spray then put your pieces into it. Depending on how fast your air fryer heats up, you should cook them on 390F/198C for around 12-15 minutes or until your pieces reach 165F/73C. You can flip them over halfway through for optimal crispiness.

Storage and reheating? They should last around 4-5 days in the fridge or a couple months in the freezer. To reheat them, do it back in your air fryer but this time throw them in for 4-6 minutes at 350F/176C.

- Season all of your pieces with your Salt, Black Pepper, and Garlic Powder
- In a medium bowl, add your Bread Crumbs, Italian Seasoning, and Paprika
- Mix those together
- In a small bowl, add your Mayonnaise, Greek Yogurt, Mustard, and Parmesan
- Mix those together
- Evenly spread your parmesan mix over each piece of chicken (both sides)
- Press your bread crumb mix into each piece (both sides) or roll your chicken around in it until fully coated
- Coat your air fryer basket with cooking spray and places your pieces in
- Cook them on 390F/198C for around 12-15 minutes or until your pieces reach 165F/73C
- Optionally flip them over halfway through for optimal crispiness

We went with fat free mayonnaise as it’s all I had left and they turned out great!! Way crispier than what I usually get out of my oven.
