We’re back with another seasonal recipe! This time? Without pumpkin! We’re combining two of my favorites, rolled oats and apple pie to make some Apple Pie Protein Overnight Oats in 5 minutes or less! This healthy breakfast (or dessert) recipe is great for fall, packed with fiber, and guaranteed to fill you up.
Start this one with either a mixing bowl or your favorite overnight oats jar. The benefit of using a mixing bowl here is that you can easily “layer” in your apple filling if you choose to do so (I usually just put it on top).

Add into it whatever you’re using, 3/4 cup of rolled oats, 3 ounces of a vanilla or apple flavored Greek yogurt, 1/2 teaspoon of vanilla extract, 3 ounces of a milk or milk substitute (almond, cashew, coconut, soy), 1 scoop of a vanilla protein powder, 1/2 teaspoon of ground cinnamon, 1/8 teaspoon of ground nutmeg, 1 pinch of salt, and 1 optional tablespoon of a sweetener if it’s not sweet enough for you.
Here’s where you can add anything else you want in like some chia seeds for a thicker texture. Some of my other favorite things to use?
Overnight Oats Add-Ins
- Crushed pretzels
- Hemp hearts (extra protein!)
- Dried fruit (raisins, chopped dates, cranberries, apple chips)
- Shredded coconut
- Granola clusters
- Toffee bits
- Nuts (pecans or walnuts)
- Chopped up protein bars

Mix those protein overnight oats ingredients together.
Pro tip? If it’s too thick, add in a little more milk. If it’s too thin, add in a little more Greek yogurt!
Apple Pie Overnight Oats
For your apples, it’s your choice! Are you team green or team red? Drop it in the comments below. You’ll need half of one, and to chop it up into small pieces. Put those pieces into a bowl.

Add in 2 tablespoons of a sugar free syrup and 1/2 teaspoon of ground cinnamon. Mix those up until they’re all coated.
You now have 2 options with your apple pie protein overnight oats. Option 1? Microwave your apple pieces for :30-:60 seconds. Depending on how powerful your microwave is, they should soften up by then. Option 2? Keep them crunchy and use them fresh. I prefer microwaving.

Once that step is done, you’re ready to complete your apple pie protein overnight oats! Either dump them on top or layer them in by pouring half your overnight oats mix into your jar followed by half your apple pieces and repeating.
Cover them and put them into the fridge overnight. Can’t wait overnight? Give it at least 3-4 hours!
To give it even more of an apple taste? Mix in 1-2 tablespoons of unsweetened apple sauce the day you plan to eat it.

Apple Pie Protein Overnight Oats

Ingredients
Overnight Oats
- ¾ Cup Rolled Oats
- 3 Ounces Greek Yogurt - Vanilla or Apple
- ½ Teaspoon Vanilla Extract
- 3 Ounces Milk - or Milk Substitute
- 1 Scoop Protein Powder - Vanilla
- ½ Teaspoon Ground Cinnamon
- ⅛ Teaspoon Ground Nutmeg
- 1 Pinch Salt
- 1 Tablespoon Sweetener - *Optional if not sweet enough
Filling/Topping
- ½ Apple - Chopped
- 2 Tablespoons Syrup - Sugar Free
- ½ Teaspoon Ground Cinnamon
Instructions
- Take out your overnight oats jar or mixing bowl
- Add all your Overnight Oats ingredients into whatever you're using
- Mix them together
- Chop up your Apple
- Toss those pieces with your Syrup and Ground Cinnamon until fully coated
- Microwave them for :30-:60 seconds depending on how powerful your microwave is (you want them softened)
- Mixed it in a jar? Dump your Apple pieces on top
- Used a mixing bowl? Take out your jar, add half of your overnight oats mix then half of your pieces and repeat
- Cover and put it into the fridge overnight





Having never tried overnight oats before, I wasn’t sure what to expect. SO so good!! I don’t see myself eating regular “oats” again. The texture and flavor were perfect! Now I’m going to try all the other ones!
