Mexican Meatloaf Muffins

It’s time we remix meatloaf! These Mexican Meatloaf Muffins are super easy to make, absolutely delicious, and GREAT for meal prep! This spicy meatloaf recipe is packed with protein, healthy, and fun.

Start this recipe by taking out a large bowl to mix all of your ingredients in and either a muffin pan or some silicone cups to bake your “muffins” in.

Add into your large bowl 1 1/2 pounds of lean ground or turkey beef, 8 tablespoons of salsa, 2 large whole eggs, 3/4 cup of rolled oats, 6 tablespoons of low sodium taco seasoning mix, 3/4 cup of a Mexican blend cheese, 4 tablespoons of a low sugar ketchup, and 1 teaspoon of chili powder.

Mix all of those ingredients up good. I like using a washed (video reference) hand for this part. You could also use a fork or really…anything.

Make sure to use a lean meat for this Mexican meatloaf muffins recipe or your muffin cups may end up with too much liquid (fat). Anything over 90/10 should be good.

Calorie tip? Using a leaner meat than 93/7 (what I used today) will cut down on the calories even more.

Take out your muffin pan or silicone cups like these and evenly distribute your mix into them. You should get around 12 Mexican meatloaf muffins depending on how big you make them.

Put them into the oven on 350F/176C for around 20-25 minutes.

You can easily change this recipe up by adding in or topping them with your favorites! Use chopped up vegetables, other cheeses, herbs, spices, and so on. Think outside the box and let me know your favorite variations in the comments below!
